Had a couple of sweet potatoes, quarter of a red cabbage, broccoli, handful of Brussels and a couple of carrots to use up - I parboiled, sliced and roasted the sweet potatoes; thinly sliced the red cabbage, made the carrots into batons, halved the sprouts and sautéed all together in 'butter' olive oil and wholegrain mustard; steamed and mixed the broccoli with some seed butter; cooked some puy lentils and whipped up some hommous - all very tasty!! 😊DNF: £708.92/£1000

Discovered some chorizo style shroomdogs in the freezer yesterday so chopped them, potatoes, onions, garlic and chilli and sautéed, added some tomato puree, paprika, black olives and stock and cooked until potatoes were tender - very yummy! 😊

I'm doing a cupboard clear out/ reorganise today 🙈 I've realised that I've got far too much stuff food wise- half of it has been lurking for ages! I'm no longer going to buy in bulk as we just don't get through the quantities we used to so I'm setting myself the challenge of buying no more dried or tinned goods until we've used up at least 3/4 of what we currently have 😉 ( I see lots of pulses and buckwheat on the menus ahead!! 😂) On the bank holiday weekend I'm going to make job lots of pasta and dehydrate it (I have a ridiculous amount of pasta flour 🙈) and also cook a load of beans to freeze to make life easier 😊
I'll be back on here more regularly too - I've started to embrace healthy eating (been on a bit of a detox) so there'll be less maple dressing used! - I find it helps me run down my stocks 😉DNF: £708.92/£1000

Wow - I have a ridiculous amount of food!! 🙈😂 Cupboards have been emptied, cleaned and reorganised- I'll be going to the wrong ones for the next few days but it's worth it! 😉
Over the past few weeks (until the beginning of this week) I have been on a detox and I have to say that tI felt a whole lot better for it so from Monday I'm sticking to many of the principles but expanding what I can eat 🙌 Now that I can see what I have, it will be a great deal easier - I'll be having salad, grains, veg and herbs for lunch and dinners, fruit for breakfast and sticking to water for drinks. I've got lots of ideas to jazz it up so I'm looking forward to Monday! 😁

I'm on a similar mission to you @leftatthetrafficlights, I too have a ridiculously full store cupboard, lots of dried beans and grains and loads of random stuff like Chapatti flour I've never even touched. It's a good idea to use some stuff up in bulk and freeze, I think I'll do the same with some beans as I always end up using the tinned ones when I'm in a hurry (which, with 2 small kids, is always haha).
About to make a lentil loaf for our roast dinner later - we normally use some kind of meat analogue but they're so expensive in comparison and lentil loaf is a lot more nutritious too.Starting debt 2018: £26,000

Yes I've been doing this too, cancelled the veg box for this week, and going to try to get through the cupboard and freezer stock instead. However I also want to make some beetroot bread too, been years since I made bread and well I do have beetroot to use up!
