Although I know what I have in the cupboards, I really need to sort out what's in the freezer - I realised the other day that pretty much every label I used has gone 🙈 my plan is to take a box out at least once a week, defrost it then do a meal around it - I'll end up with random stuff but at least it will get it to the empty stage so that I can defrost and clean both the freezers and get them more organised 😉
At the moment I am using as much garden produce as I can - lots of broccoli, beans and peas, courgettes, tomatoes and herbs being used so at least I'm not adding to my stores!
I've decided that I really need to run down the enormous amount of food that I have before I get my kitchen re-done....now that it's only the two of us here it's ridiculous having the stock levels I'm used to keeping 🙈😂DNF: £708.92/£1000

Made a slight error on my @sda order and ended up with four bags of frozen chips instead of two. Freezer is already pretty stuffed so got a tub of what is labelled as dal out for dinner tonight - at least that's what I hope it is
Also desperately need to defrost my chest freezer but no hope for the time being!
Off to visit my sister next weekend though so will be taking a few bits down to her, will make a tiny dent.0 -

Got my first 'mystery' box out of the freezer - turned out to be a tomato and basil sauce 🙌 I added some onions and garlic and ran it through some pasta, served ot with salad leaves, papaya and mango salsa and hommous- very nice! 😊DNF: £708.92/£1000

Did stuffed courgette last night - had a rather large courgette from the garden so cut in half, hollowed out and roasted the shells in the oven while I cooked the diced flesh in a pan with onions, the last of the peas from the garden and coriander (also from the garden 😉) filled the shells then grated some vegan Greek style cheese on top and popped back in the oven. Served it with salad leaves, the remains of the papaya and mango salsa, broccoli stalks in garlic butter and hommous 😊

That's sounds yummy @leftatthetrafficlights. I love rice stuffed peppers which I always add different veg to depending on what's in the fridge at the time. It's a great way of using up bottom of the fridge veg!1

@joedenise I love stuffed peppers too! Must admit that I haven't had them for a while as I've just been chopping and roasting them then drizzling with balsamic and having as a side dish - mainly because that's what I've been craving!! 😂 I sometimes halve them, add some whole basil leaves, olive oil and a quartered tomato along with a chunk of vegan Greek style cheese and a couple of olives then roast them - lush! 😍
I did some cannellini and black turtle beans (soaked and then boiled till tender) on Sunday- I then cooked them in the oven in stock, lots of sage, thyme and garlic - served them yesterday with mashed potato and red cabbage, have made a soup with some (just took out the thyme stalks and blitzed with a bit of additional stock) which I'm using for lunches with a salad and will serve the remainder tonight with brown rice, leaves and a beetroot and apple salad. I do like cooking once and having a variety of different meals! 😉DNF: £708.92/£1000

Dinner tonight was a nut roast that I discovered when I sorted my cupboards; green beans, runner beans and turnips in a tarragon 'butter' (veg and herbs picked fresh from the garden); carrot batons cooked in stock, wholegrain and dijon mustard; and roasted butternut squash 😊 will probably be having the same tomorrow as I may have overdone the quantities!! 😂😂DNF: £708.92/£1000

Was given an enormous marrow at the weekend so hollowed it out, put the oiled shells in the oven for 20 mins while I took a box of tomato and basil sauce out of the freezer, cooked some vegan mince, onions and garlic with the marrow flesh, added the sauce, filled the shells and cooked in the oven - tastes lovely! It will do me today too - I'll serve it with leaves and a papaya and passion fruit salsa 😍DNF: £708.92/£1000
