    @leftatthetrafficlights can you share your seitan bolognese recipe? Do you buy a seitan mince or make with vital wheat gluten/washed flour?

    The My fridge food app, and Suprcook app have  vegetarian options.They're fab for when you're running out of ideas, n even has recipe videos x

  • @bubblycrazy - I'm afraid I can't help out with the questions; I don't own a slowcooker and never use food apps! 🙈 
    @MandM90 I make my own seitan - very basic recipe below but I normally change it by adding balsamic vinegar, different herbs, marmite etc (I'm very bad at following recipes!! 😂): 

    7oz wheat gluten; 0.25 cup chickpea flour; 2tbs nutritional yeast; 2tbs mixed herbs; 2tsp 'beef' stock powder or 2 cubes; 1tsp onion powder; 1tsp paprika; 1tsp garlic powder; 1tbs olive oil; 1tbs tomato paste; 1 cup 'beef' stock. For the broth - veg or 'beef' stock

    Mix all the dry ingredients, whisk together the wet ingredients and add to the dry, mixing until combined. Knead the dough for minute then leave it to sit for 5 mins. Bring the broth to a boil then lower to simmer - add the seitan. Simmer for 45-55 mins turning every so often. Once cooked, let it sit for about 10 mins.  

    Once I've made the seitan, I cube it then pulse it in the food processor to make mince. Then it's just the usual bolognese making - onions and garlic cooked, seitan added and mixed in along with herbs, tomatoes etc added then whole thing cooked for 30 mins 😊

  • Made a really lovely chickpea dish yesterday using the dregs of the sauce bottles I had lurking -  tomato ketchup, brown sauce, hoisin and plum sauces- just sautéed a chopped onion, added a bit of water to the sauce bottles and  swished them, chucked them in and added some cooked chickpeas. Simmered until it had thickened and served with fried rice 😊 
    Today I'm doing roasted cauliflower slices with sage and garlic butter, sprouts with orange and ginger, garlic crushed new potatoes and kale with walnuts and wholegrain mustard. 
    Tomorrow my 'Fabulous February' begins and I've written my 28 day menu plan - I'm doing a click and collect for my groceries tomorrow morning so plenty of yummy meals ahead! 🙌

    So last night was aubergine stacks (chargrilled aubergine slices with hommous and a red pepper sauce) which I served with the remaining cauliflower slices, parsnips and carrots in dijon, maple and orange and a salad of pomegranate, avocado and leaves.
     
    I put wild rice in the dehydrator last night so tonight we are having roasted red onions, bloomed wild rice, leaves and mango and papaya salsa.

  • The papaya wasn't quite ready so did a salad of blood oranges, red grapefruit, fennel, red onion, red chilli and black olives instead 😉 
    Tonight has been a freezer dive meal - it's our anniversary so I didn't want to cook - ended up with frozen 'party' food which was okay but reminded me of why I steer clear of ready made stuff most of the time! 😂 
    Tomorrow I'm doing a rice bake with red cabbage relish- the relish was made yesterday - red cabbage and red onions slow cooked with dates and orange juice. I'll put some chickpeas, tomatoes and herbs in the rice before I bake it and use up the rest of the hommous as a side along with an apple and pear salad.

  • Last night we had  roasted butternut squash slices, cauliflower roasted in a teriyaki, chilli flakes and smoked paprika glaze, garlic crushed potatoes and the remains of the red cabbage relish and the pear and apple salad. Tonight I'm doing a bean chilli with brown rice - although I've had my grandbaby this weekend and I'm knackered so might just end up with beans on toast!! 😂
