Glad this thread has started up again. Will try to contribute. Today I made two batches of soup, one mostly carrotty type but with other veg and some lentils (not as much as to call it lentil!), the other v spicy minestrone type. We had left over beany tomatoey stew with more broccoli added and half tin Tesco mixed beans to pad it out.My meals tend to be stew type and then I can add extra chilli to DH’s.2

Like you wmf I have been making carrot/coriander/red lentil soup and a risotto type dish over the weekend. We are definitely getting into soup season and life is so uncertain at the moment it's hard to know what to add to one's store-cupboard. I think I will persevere with jackfruit dishes, as it's so affordable - if only I could make it less sweet! I haven’t tried jackfruit, Living Proof. Heard a lot about it though. I am happy eating similar meals and just make sure I include plenty variety of veg. I like making a big pot of something to last days. I eat a lot of hummus so intend to get back to making it again.I bought Oct Vegan Food & Living magazine which only showed me that I’m not fussed about trying the fancy recipes. I very rarely buy a magazine but will pass it on to someone who might cook from it.2

Resurrecting this thread to ask if you are all sorted for your vegan Christmas dinner menus? We are planning
starter: spicy parsnip soup
main: Sgaia stuffed roast with a ton of veg, roasties, cranberry sauce etc
dessert: M&S churros with Swedish Glace ice cream and maybe caramel sauce
Have the best possible Christmas, lovely vegan folk2 -
We are doing Yule/Solstice tomorrow. Next door and us are basically one household - we've been bubbling with them since they moved in a few months ago and we will be having a day round theirs.
They will be providing a few nibbles before dinner, not sure what yet.
Lentil loaf (for me and veggie next door neighbour. Our OHs will unfortunately be having meat), roast potatoes, maple roast parsnips, roasted thyme carrots, brussel sprouts (maybe with chestnuts), red cabbage (mabe braised), steamed broccoli and vegan gravy. Perhaps peas and sweet corn as well if it is wanted.
Chocolate hazelnut dessert. There are also mini vegan christmas puddings, DF custard, DF cream and DF ice cream if that is preferred.

I may take a leaf out of your plan and do the spicy parsnip soup. I have home made vegetable stock and plenty of parsnips to get through.
I may put all the food I have in up soon. Have loads in but with no job now will have to be careful in how to use it as efficiently as possible.I am a vegan woman. My OH is a lovely omni guy2 -
We had Oatly cream in the fridge, but didn't need it as the parsnips went naturally creamy when they were blended at the end.
Sorry to read you have no job now (assuming it was not through choice) As you are a seasoned MSE-er, I am sure you will know all the skills and tricks to make the best of your budget, but just shout if you are looking for any ideas
