I am a recent convert to Jackfruit, having had it on the Morrison's Vegan pizza and I am amazed that the tins are only about a pound or so. Living proof, I made a variation of this yesterday and was very successful. I have a recipe book which suggests once cooked leave for 12 hours for the flavours to develop. I did this which I guess allows the jackfruit to absorb the spices. Anyway, it tasted good layered up with salad, thinly sliced gherkins and baked red onion 😊4

Just came on here after a long maternity-leave+lockdown madness - induced hiatus. Sad to see squirrelgirl has gone.
I've always loved her recipes.
I have a store cupboard full of stuff but keep finding myself shoving convenience foods in the oven at the moment. Just started full time work again after my second maternity leave, and frequently find myself just having 20 minutes to come up with something in the moment. If anyone has any kid-friendly easy and quick recipes to share, I'd be very grateful. DS1 will eat most things except courgette, peppers and aubergines (still working on that but he's only 6).

Hi all, long time lurker here but hoping to get some pointing the right direction please!
I'm looking for:
1) a vegan version of 40 meals in 4 hours, where you meal prep for slow cooker of similar in one go
2) an app where I can load my ingredients (store cupboard and fresh/frozen) and it churns out meal suggestions.
I've seen both aimed at meat eaters and just wondered if there are similar vegan versions available

I've been vegan for almost 5 years now and a forumite here (on and off, I'm a drifter) for years too... I am currently battling a few things and the food budget is one of them, so I'm back for inspiration!
I have done the Grocery Challenge often, and I started a vegan recipe thread for it... it's here somewhere. I'll see if I can add to it.
Anyway, today I have done a full storecupboard inventory. I won't bore you with it, but it spanned 5 pages. I'm grateful, it's mostly lentils, rice, tinned tomatoes/veg etc... all stuff I can work with. It's all in a spreadsheet ready to go.
I've reverted back to cash shopping (£80pw), which is a little against the grain at the moment, but it's the only way I can stop myself bunging my card in the machine and overspending.
Just about to try and cobble together a menu plan for the week, as I shop on Sundays. There is me, my husband, two teenagers and our Yorkshire Terrier, Frodo. We are all super busy so sometimes having the time to cook is a challenge. But it's one I need to attempt.

I find the important way to kickstart my cooking is to inject plenty of variety. A vegan diet can become a bit samey without some effort...or us that just me? I have found myself in a food rut more than once due to time constraints. Now, after inserting a rocket somewhere, I make one new recipe a week. It reinvigorates me and sends me off down different culinary paths. I visited a stately home last week and they were kindly gifting veg out of their kitchen garden - what a treat 😊. I came home with a fennel tucked under my arm and no idea what to do with it! Anyway, out of the hat came roasted fennel, new potato and tomato stew with black olives. A first and it shot down the hatch.3
