Had pasta with a tomato sauce last night - sauce was made with fresh seeded tomatoes, onions, garlic and red wine all cooked for about 45 mins - flavour was amazing!
Looking at the weather forecast for later this week I decided to get some dishes organised so that I won't need to cook! I had some smoked tofu in the fridge so cooked it in the oven in a a strawberry, prossecco and chilli jam that I had open - I'll eat that tonight with Mediterranean potatoes and hm hommous.
I've also made a random dish with courgette, red pepper, onions, garlic, chickpeas, carrot jam (made with star anise) and red cabbage relish- the jam and relish were in the fridge so decided to use them up by chucking them in 😉 I'll have that tomorrow with buckwheat.
I have a box of chickpeas in the fridge leftover from cooking them yesterday so will use those later in the week with garden produce - I have a large courgette due to not seeing it so will do some type of stuffed courgette with that!3 -
I've been having a bit of a life rethink recently (birthday coming up so no surprises there 😉) and decided that I am getting very little from these boards these days - I used to find them very uplifting and supportive but over the past few months many of the threads I subscribe to have been incredibly negative, full of holier than thou comments and generally pretty depressing 😔 Upshot is, I'm getting rid of my account- I just wanted to come on to let those people who have contributed in any way and to say thank you to all of you - your encouragement has meant a lot to me over the years and I'm incredibly grateful for that and thank you all 😊 I wish you all a happy and prosperous future x

Sorry to see you go squirrelgirl, your posts have been very helpful to me, and I'm sure many others.
Going to attempt to bake a courgette loaf today, baking isn't my strong point, or cooking in general really, but I have some homegrown courgettes I was given and a loaf will be great to take to work.
