Vegan Japaneasy sounds good @cod3!
@Doom_and_Gloom - sorry to hear that you have no job, hopefully (if it's what you want) something better will be just around the corner 😉
I'm on a mission to eat more healthily next year and spend as little as possible- I have a large amount in stores and want to empty my freezers so I can defrost them so will hopefully only be buying salad, veg and fruit in January 😊 I still have some veg in the garden to use up and my fruit bowl is pretty full at the moment so hopefully will have a very low spend for the first week of January!
I've taken some vegan 'steaks' out today so that I can have them as burgers tomorrow...I don't know what else is in the freezers so need to check it out - it would be good to see your list @Doom_and_Gloom 😊DNF: £708.92/£1000

We got a big veg box delivered this morning and it all looks amazing quality. It is too icy to go to the shops plus we are in the highest tier here so avoiding going out much. It was £30 and should keep us going for a while. We don't get to pick what is in the box so have to get creative
We had curry last night and tried this Bombay potatoes dish to go with it. Was very tasty and used up some potatoes that were starting to turn https://thewanderlustkitchen.com/bombay-potatoes/ We didn't have black mustard seeds so used yellow ones. Will definitely make again.2 -
Nomnom bombay potatoes! 😍 thanks for the link @cod3! I love a good Indian feast! 😊
Had 'burgers' for lunch laden with red onion chutney and cucumber relish - absolutely lovely! Tonight we are having a 'fridge raid' meal - I've got a lot of vegan pastrami, ham, cheeses and lots of chutneys, olives, crackers etc lurking around so I want to use them up!
Tomorrow I'll make pizza with hm dough and whatever is left from the fridge raid tonight - I've got some salsa which I'll jazz up with herbs and tomato puree for the tomato base so no additional stuff to buy or use 😊DNF: £708.92/£1000

Happy new year everyone! 🎉
Today I am having a buddha bowl for dinner - salad leaves, short grain brown rice, chickpeas with garlic and mint, kale and brussel sprout salad and a grape, melon and blueberry salad. I'm not sure what dressing I will use - going to see what takes my fancy when I make it 😉 Everything is coming from either the fridge, cupboards and garden 🙌DNF: £708.92/£1000

Happy new year @leftatthetrafficlights , everyone and any new Veganuary visitors
Your dinner sounds very healthy and colourful and a great way to kick off the new year with a no-spend day!1 -
Yesterday's buddha bowl was changed somewhat - it was too dark by the time I wanted it to go into the garden to get the sprouts and kale so didn’t have those, found some salsa in the fridge (less than a quarter of a pot) so did the chickpeas with that and some chilli powder and the blueberries had mysteriously disappeared so did a melon, grapefruit, grape and orange salad instead! 😂 best laid plans!!
I've still got some of the rice and chickpeas left (along with some of the melon salad) so I'm thinking that I will use them up today - I found some vegan soft cheese in the fridge last night so I'm planning on mixing it into the rice and chickpeas and making a rice bake. I'll also harvest the kale and sprouts to go with it but I'll get them this afternoon before it gets dark! 😂The fruit I will have with salad leaves for lunch along with an avocado I have lurking - I may make a bean dip/hommous to go with it.
Happy cooking! 😊DNF: £708.92/£1000

I'm vegan already but signed up to Veganuary and they have some good simple recipes, and lots of others. I've actually printed this booklet so my DD (12) can make some recipes: https://veganuary.com/wp-content/uploads/2020/11/Veganuary-2021-Budget-Meal-Plan.pdf
I like how everything is priced out, will definitely give some a try though I have my own versions of most of those dishes.3 -
Thanks for adding the link @MandM90 - I think it will be very useful for people who are trying out vegan 😊
I had some potatoes to use up over the weekend so made some dishes with them - horseradish mash which I had last night with a seitan pie that I made in December and froze, along with some veg and gravy - nomnom!! Just what was needed on a wild and wooly night 😨😂
Sunday I had a curry from the freezer along with some spicy potatoes - I bought mango chutney a while ago that I'm really not keen on so cooked it with some vegan tikka masala paste and finished off par-boiled potatoes in it. They were really nice!
I also made a potato dish with the remains of a jar of cranberry sauce, onions, garlic, olives, capers and a tin of cherry tomatoes. I put the cranberry sauce in because it was another one of the ones I bought that I really wasn't keen on! 🙈 It actually worked really well but I've had to put that into the freezer though as we've still got lots of pie left!
I'm going to have tinned marrow fat peas with the remains of the pie tonight along with gravy and tomato ketchup- one of my favourite things!! 😊DNF: £708.92/£1000

I think lunch today will be mash, Richmond sausages, broccoli (from freezer) and green beans (from freezer). I froze the tenderstem without blanching so I hope it'll be OK. If not will drown in gravy.
I have some kale and a cauli to eat so will do a curry and brown rice tonight. DD won't eat that so will have to make do with beans on toast as I'm not cooking two full meals!1 -
Have just made a red lentil n mushroom Dahl, which I'm having with naan bread later 😝"You can't stop the waves, but you can learn to surf"
