    Any lentil, bean or rice dish could be done - ethiopian lentils, cabbage and potato wats, 'shepherds' pie (just heat the base and mash separately) , bbq back beans, valencian rice, etc.  Although I've never used a vac, I freeze pretty much everything I cook as I frequently make too much - other than jacket potatoes and salads I can't think of anything that couldn't be reheated on a hob 🤔

    Thanks joedenise and squirrelgirl - I had totally forgotten about Jack Munroe but have dug out my Bosh cookbook and hopefully I can adapt something from there too. I reckon we could get a week's dinners between the fridge and small freezer compartment and if we are going away for longer I will make up mixes of herbs and spices so that we don't have the faff of preparation in a confined space. Fortunately we are red wine/beer drinkers so ice doesn't get a look-in!

    I bought a small round box with lid which fits into one of the drawers and it's the exact height of spice/herb jars so I keep my regularly used ones in that so I've always got them to hand, things like mixed herbs, cumin, coriander, garam masala, paprika.  I like to take them with us as we go away for a month at a time to France (can't wait to get back there but won't be going until the FCO says we can as no way will I travel without insurance which isn't currently valid).  A few herbs or spices liven up even the plainest of food.

    We're also red wine drinkers, DH also drinks beer but I don't so it's not all G&Ts, LOL!

    Enjoy your holidays when we're allowed to get away again!  We're booked for a week in a fairly local site next month which we're really looking forward to but will be taking as much of our own food as we can pack in and hopefully won't need to shop (not even milk because we'll take UHT!).

    I take flaxseed capsules as I don't like the taste of the oil.

    I just had a blueberry, soya yoghurt and soya milk smoothie. I think I will make a vegan roast dinner today as I have loads of spuds and carrots.

    I just had a blueberry, soya yoghurt and soya milk smoothie. I think I will make a vegan roast dinner today as I have loads of spuds and carrots.
    I sprinkle ground flax seed on porridge and in smoothies.  I found that with chia seeds I got a lot of indigestion..  I've only been vegan (moved from a carnivore diet) at the beginning of February, so I've just paid my money for a Happy Pear course on vegan cooking.  I buy things from recipes I've seen on you tube and then don't use them, so hopefully this will save money in the long run.

    Today I'm having tofu baked in a combo of a sour cherry sauce and a strawberry, chilli and Prosecco jam served with the first salad leaves picked from my garden! 🙌 I'm very excited about my leaves - dh has picked some radishes over the past couple of days but I'm not keen on them so this will be the first of the garden produce for me 🍾

  • Had a bit of a disaster on Friday- I'd put tomatoes in to roast then got caught up in a 90min phone call! 🙈 I was going to throw them out as they were somewhat burnt but decided to blitz them, add olive oil and some balsamic - it's actually a really nice dip/spread!! 😂 very intense deep flavour and we've been eating it with hm rosemary foccacia over the weekend 😊 I'm really pleased that I decided to attempt  rescue them - dh thinks it's lush and I'm going to use the rest of it as a tapenade spread on some puff pastry, then add slices of homegrown courgettes, tomato wedges, black olives and homegrown purple basil 😉 bit of a result really! 😂
