Chuck it in food made today - butternut squash, red onion, garlic, sweet potatoes, couple of carrots, new potatoes, basil, olive oil and a tin of cherry tomatoes thrown together and put in a low oven - tastes fab 😊
I also had about 3/4 of a large tin of pineapple which I opened for pizza at the weekend so I have made some pineapple vinegar (thanks for the idea toastlady!) and then a pineapple jam/chutney with the removed pineapple, sugar, water, a finely chopped red chilli and chocolate mint. Hopefully it will set (still really hot at the moment) as it tastes amazing!2 -
I was just watching Avantgardevegan (Gaz) on YT and he was making vegan fish and chips with banana blossom, it looked absolutely lush! He did it in beer batter.2

Ideas please for vegan meals for two which can be pre-cooked, vacuum packed, frozen and then used in a camper van which has just a three ring hob and a poor grill. We have been re-heating the vac-pacs like sous vide and up to now have cooked curries, spag bog and other pasta dishes and I wondered whether any of you have any favourites which would stand being frozen, vac'd and re-heated. We do, by the way, use the vacuum bags several times so the environmental aspect is balanced by the lack of waste and fuel. Have at look at the Jack Monroe website (www.cookingonabootstrap.com ), loads of vegan recipes which would work like that. One recipe which I use regularly is her mixed bean goulash which uses tinned beans (she uses washed baked beans and kidney beans as they are the cheapest but I much prefer to use mixed beans!), tinned tomatoes, some stock, paprika, onion & garlic so it's also very cheap.
Mushroom rogan josh, chickpea and peach curry, Keralan aubergine curry are other recipes which might be worth a try.
I wonder whether it would be possible to borrow her tin can cook book from the library when they reopen which might have recipes that would work in a camper van. I use quite a lot of can when we travel in ours as they are quick and easy to reheat. We can't too much frozen food as we only have quite a small icebox across the fridge so can only get about 3 or 4 meals in it plus a bag of ice cubes for the G&Ts (got to get our priorities right, LOL!).
