I think lunch is the easiest - even if the weather isn't brilliant a loaf torn into pieces or some rolls with some cheese and tomatoes always goes down well. A peice of fruit and some crisps or something and you have a feast!
if your son loves eggs, what about poaching them in hot water for breaky, or scrambling them. easy and quick.
dinners - think pasta a sauce is a good idea one night. again easy and quick. If the weather is good salad is easy, quick and tasty. how about making a veggie chilli before you go and just heating it in the pan when you want to eat it?

When we are camping, I have no fridge, so I end up making lots of vegetable stews with dumplings, pancakes with various fillings, pasta with tinned salmon or tuna and sweetcorn, Vegetable chilli or curry with rice. I love old fashioned sea side holidays. Dont forget to take some old fashioned games like tiddly winks etc with you.0

Do you have a pressure cooker - or can you borrow one? We always took ours when we had a camper van.
If you do take the slow cooker, how about sausage casserole? Brown the sausages in a dry fying pan first to get rid of excess fat and to give them some colour. Large tin of tomatoes chopped, dried mixed herbs, diced onion softened in frying pan as well, chopped mushrooms, some chopped peppers if you have them left over from a salad, and maybe even add some diced potatoes so that the entire meal is in one pot (if the sauce is a bit thin it can be thickened with a couple of spoonfuls of powdered mash or gravy granules) - or serve with pasta and crusty bread.
Bacon (or sausage) butties are good on holiday as well. I've noticed people using those disposable barbecues on beaches as well - some burgers, sausages and buns plus a squeeze of tomato ketchup.
Enjoy your holiday - but I hope the weather is so nice that you don't need to have to cook casseroles etc.

It's eggs poached in tomatoes and other veg cooked down on the hob, and is great one-pot vegetarian cooking. I've done it a few times in that holiday 'one ring, no fridge' situation.0 -
the recipe on the bbc isn't quite how I do them - I make loads loads more veg sauce with the tomatoes and then hollow out wells to break the eggs into for them to poach.0

Thanks for all the ideas, I'll go and look and see how much room there is the preasure cooker is a no no though as they are very small rings and won't take the weight and we just don't have the space it will be cramped enough we 4 of us and minimal stuff as we have to store the kids car seats in the cab area as well as all the clothes and bedding during the day and then the kitchen area is so small I need things that I can cook quickly as its unsafe to leave anything un-attended with the kids about. I will have a think and post what I plan0

why not buy a cheapie two man tent, then one adult/child could sleep in the tent and the others sleep in the van.. thus giving you a bit more space.
you can get them pretty cheap these days...thus a bit more space for cooking....
or just buy some disposable barbeques.. very cheap and easy to use and just throw after use..
just a few ideas to make things a bit less cramped for you ...

Dutch crispbakes can replace toast with scrambled eggs also melt cheese (gently)with a spoonful of milk in a saucepan and pour over "toast" with mushrooms and tomatoes.
Also fry chunks of veggie sausage annd cover with a tin of ratatouille or baked beans and serve with french bread?0 -

The site doesn't alow tents and even if it did it would more double the cost of the holiday I'd need to buy the tent, another sleeping bag as we have a double, then the fees for the tent, plus the thought of not sleeping with hubby is not my idea of fun also no barbeques alowed on site as it is a fire hazard, plus there is not much veggie food that can be cooked on a BQ unless you go off and buy frozen which is expensive and not very nice tasting.
We will be fine in the van just need to plan and take the bare minimum.0 -
How about some cheapy packet noodles with stir fry veg (you can buy these ready prepared pretty cheaply). You and OH could have some chilli sauce or similar with yours and leave the kids plain.
Eggy bread could be quickly and easily made on the hob and can be sweet (cinnamon or golden syrup) or savoury (cheese added to egg mixture and served with fried mushrooms and tomatoes or beans). This could be breakfast or lunch.
Instant mashed potato isn't something we'd normally eat, but we've been known to dish it up with beans and grated cheese when camping as it is so quick and easy.
Bread, cheese, tomatoes, coleslaw etc would be my choice for lunch a couple of days. Also you said that you DS doesn't eat cereal, but would he eat porridge as this would be an easy breakfast for everyone.:DYummy mummy, runner, baker and procrastinator0
