:rotfl::rotfl:So do I, I've just never tried cooking it before:o so it's usually only a treat when I go to DMs!

Yes, please :D as I've got a Le Creuset type pot which would be perfect for that .... and more bits of beef in the freezer to try it with:o

I vaguely remember being in Mr As one day and there was a load of bits whoopised to silly money so I bought several of them .... and they've been in the freezer ever since as I've no idea what to do with them!:o
    :) Here it is then:

Boeuf en Daube from Slow Cooking by Joanne Glynne page 110.

    Marinade

    2 cloves
    1 onion, quartered
    2 cups red wine
    2 strips orange zest
    2 garlic cloves
    1/2 stick celery
    2 bay leaves
    a few parsley stalks

    Daube

1.5/ 3 lb 5 0 oz beer rump, topside, blade
    2 tbsp oil
    3 strips pork fat
1 pig's trotter OR 8 oz piece streaky bacon
    700 ml/ 24 fl oz beef stock

    Cooking time 2 3/4 hrs serves 6

    To make marinade;
Push cloves into a piece of onion and mix together i nlarge bowl with thge remainiung marindae in ingredients. Cut beef into large pieces, season with salt and pepper add to marinade and leave OVERNIGHT.

Heat the oil in a saucepan, lift beef from marinade and pat dry, then brown in batches in the oil and remove to a plate. You might need to use a little of the marinade to deglaze the pan betwen batches to prevent bits sticking and burning.

Strain the marinade thru a sieve into a bowl and tip soeve contents into the pan to brown then remove from the pan. Add marinade liquid to the pan and boil, stirring for 30 secs to de-glaze pan.

Put the pork fat in large casserole dish then add pigs trotter (or bacon), beef and marinade ingredients. Pour in marinade liquid and stock. Bring to boil, cover, reduce heat and simmer gently for 2-2.5 hrs until meat is tender.

Lift meat out of casserole and transfer to a serving dish cover and keep warm. Discard garlic, onion pig fat and bacon or trotter. Pour liquid thru a fine sieve and skim off as much fat as possible, the return to casserole dish. Bring to boil and boil until syrup reduced by half. Pour gravy over meat and serve.

It got closed down - due to the off board behaviour of one of the regular posters to another which spilled over onto the thread.

Flowertot mum, I echo what has been said - don't be chased off by an alter ego. Goodness me, what is more worthy of money saving old style tough times advice than when THREE lovely new babies are going to come into this world??
Flowertot, we will need loads of updates of our expectant mums' progress... pleeeeeeeeeeeeease:D

:naughty::naughty::naughty::naughty: Another desperate attempt at derailing the threads eh? Complaining that others are going off topic whilst doing so themselves..... sound familiar? Hmmm, I know who my money is on, girls. A leopard doesn't change their spots

ETA - congratulations FTM. It is lovely to hear people's good news amongst the gloom. Please keep posting
