Slimming world chips - cut potatos into chip shapes. Par boil them, shake them around a bit, spray them with fry light and then bake for 40mins or so.

I just cut into large chip chunky ones and use a little olive oil and coat them with my hands and bung into the oven at 200 for about 30 - 40 minutes - I actually bought a spray olive oil to do them as its using less oil - they are delicious.

I do pretty much the same as this, although sometimes I add some salt and cayenne pepper to the oil to make nice spicy chips. They're so good and much healthier than deep fried ones.

if you like spicy or southern chips then you can get BBQ seasoning from places like tesco, just scatter that over the chips when you do the oil/frylight part. YUM.

I peel and chop potatoes (maris piper or desiree are better) and then fill the frying pan 1/2 way with oil and fry them for 10 mins or so until they start to brown. If I am waiting for other food to finish cooking I stick them in the oven to crisp a little more.

Also, make sure you wash the chips before cooking to get the starch off them, and pat them dry with a tea towel.

Also, remember to not put wet chips into a hot oil frying pan, make sure they are dry, otherwise it all goes a bit pear shaped!

you can also nuke them in the microwave for a couple of mins to eliminate the par boiling part and they work out great that way too.

Oooooh yes!!!! Pan boils over, fat hits gas ring, flames leap up, realise still haven't got rid of inflammable blown vinyl tiles on low kitchen ceiling, panic....

Don't trust myself to do chips even in frying pan. I am sure that it is almost fool proof but fools like me can always find a way to mess it up :o
