I make potato wedges. Cut raw potatoes into 8 lengthways (to make 8 boat shapes, each with a skin side, IYSWIM - aha - think orange segments!!). Place on baking sheet, drizzle with fresh rosemary, crushed garlic, black pepper, and olive oil. Bake at gas 5, turning once, for about 30 mins.

I don't even bother to parboil. Just scrub the potatoes, cut into wedge shapes, and brush with oil (I like olive oil), season, and cook for about 25 mins or so at 200 degreesC. The exact time will depend on your oven, but it is quite obvious when they are ready. You will need to grease the baking tin well ot they will stick, or do as I do and line it with baking parchment or one of those reusable silicone things, then you will only need to wipe out the tin afterwards:)

I don't bother with the par boiling either.

If I'm in a rush I just chop them up, size depending on how long the oven is on for (i.e. in half if on for ages, into little chunks if only on for 1/2 hour or so), put in a bowl and mix around with oil.

If I'm not in a rush I'll add salt, garlic, rosemary and any other herbs I can think of.

Oh I've just done these for tea the kids loved them. :T
Chop the potatoes into chips, put olive oil onto a baking sheet and roll the chips in the oil until covered. Put in oven approx gas 6/7. Check and turn after about 15 mins and should be done in about 25-30 mins depending how thick you chopped them.

Good tips here, must say i buy low chlosterol oven chips but tend to only use three quaters of the bag as most of them are really skinny ones which turn hard cos they obviously cook quicker than the bigger ones.

I will definately try home-made from now. xx
Just to win anything would be great!!
