I would just peel the potatoes (or not if you prefer) cut into strips, spray with a little oil and part bake for 10 minutes, leave to cool then open freeze and pop in a bag and just throw in the oven as regular frozen chipsCredit Card: £796 Left/£900 October 2011 :eek:Store Card: £100 October 2011

The way I do them is to cut the chips, pop them in boiling water until they are just past blanching, dont boil too long you dont want them too soft. Drain then coat in oil or beef dripping, let them cool and spread them out as much as you can in a plastic bag, so as not to get them all sticking together, and pop in the freezer. Once they are frozen you can shuffle the bag. cook the same as any from the shop.
P.S. Beef Dripping is nicest, with a sprinkle of salt & black pepper.

The reason I decided to try it is there are times when I have potatoes and if not used in time I have to throw them out, also if they are nice it will save me buying oven chips so thanks for the advice they are now in the oven I will let you know what I think of them. VivLow Carb High Fat is the way forward I lost 80 lbs

If I have spuds close to use by, I often make mash and freeze it, good for quick topping on shepherds pie, or I bake them and freeze, defost, cut into quarters skin and all, toss in a little oil and bake in the oven till crispy, really nice.
Or I bake and stuff them with left over veg, bacon bits, ham , whatever is lurking in the fridge and top with grated cheese and breadcrumbs, put in the oven from frozen till hot and crispy.
Roast potatoes freeze quite well too.0 -
I have frozen potatoes as potato wedges (which I think are often nicer than chips and no peeling!). Just wedged potatoes rubbed with oil in a bag. No precooking and they seem to come out pretty well. I then roast them for about 30 mins or a bit more if I want more browning. I also bake filled potatoes which are pretty good cooked through post defrost and also unfilled ones which I slice and use to fry off after the bacon rather than have bread/toast and butter for breakfasts or use in Spanish ommelete. Sometimes with leftover veg I make bubble and squeak in a tray, topped with cheese and some crisped bacon which I can reaheat in the microwave for a minute and have it as a substantial breakfast sandwich (and if you're short on potato in a bubble and squeak a few frozen baked ones are spot on)!
I could make it better myself at home. All I need is a small aubergine...

Success!They must be the nicest oven chips I have ever tasted! As from today I wont be buying any chips from the supermarkets.
The method I used I par boiled the chips for 5 minutes, then put them in a mixing bowl and drizzled olive oil and a sprinkling of chilli powder salt and pepper then mixed by hand so all the chips had a coating then into a preheated oven set at max for 20 minutes, and they were fantastic some of the chips I had parboiled I put into the freezer on a tray which I will now bag, and I have enough cooked chips left so I will freeze those as an experiment to see which lot turn out the nicest thanks everyone for you help and advice. If you haven't got spray oil put the chips in a plastic bag after you've boiled them then a couple of spoons of veg oil and shake about until they're covered in oil. Then into a fresh bag to go in the freezer.Liverpool is one of the wonders of Britain,

I par boil mine in stock using a veg stock cube (err or any other I have to hand has been known, including an Indian Oxo cube - was actually v.nice)Feb 2015 NSD Challenge 8/12JAN NSD 11/16
