Chuck em in the slow cooker when doing a stew - Cold with salad cream & dill. Use them for mini roast potatos. With lots of butter (& salmon is my fav)
Or you could Par Boil them & pop'em in the freezer to help towards your stock of 5minute meals
I THINK is a whole sentence, not a replacement for I Know

I boil a load and then pan fry/saute some.
Or you could let them cool and add mayo for potato salad

I like them parboiled, tossed in oil, salt, pepper and chopped herbs and then roasted.

Or, in a similar way, parboiled and roasted with onions, carrots, peppers etc. I put the potatoes on the top, sprinkle with salt and drizzled with oil so they crisp up.

Just roasted on their own? Par boil, shake in a colander to drain and 'rough up'. Hot oil on baking tray, tip potatoes on, sprinkle with salt, pepper and chopped herbs (I use mint, rosemary or thyme. Or basil or parsley but I prefer those added at the end), toss around a bit and put in hot oven until cooked - not long 20 mins maybe? Not too good at timings and measurements!

    PS - I don't scrape, just scrub.
