    Chowder. this recipe uses the liquid from sweetcorn rather than cream, so makes it a 'summer chowder'.

    you can also make a hot potato salad - after cooking, whilst still warm, mix in oil, herbs & lemon juice or white wine vinegar. Or, if you have ready made dressing, use that instead.

    Like maman, we like them cooked & fried the next day for breakfast :)

    My favourite potato recipe is Homity pie....it's delicious but needs to be eaten warm.
    You could use normal pastry instead of wholewheat if you prefer :)

    Or how about potato scones or fishcakes?

    I would precook them, let them cool, cut a slit in the top and add some garlic butter, then open freeze and bag up when frozen, when you want to use them just pop them in a hot oven for 15 -20 mins, this works with parsley, herb butter or even cheese.

    They make a great potato salad, or my favourite current way is to scrub (keep skins on), slice about just under a cm thick, par boil until edible but a bit tough - not falling apart, then fried until crispy
