Inspiration for New Potatoes

We have a few left from yesterday that we just had boiled and am making into potatoe salad for later with crispy bacon on top.
I roast mine with a little olive oil and salt, crush them or saute them.

Tricky. New potatoes are so waxy, that it makes it difficult to do a lot else with them. You could boil them for a bit, then let them cool a bit, then slice them and replace the pie lids with them. Sort of like an individual hot-pot. Brush with oil or butter and cook with the pies. However, I have just thought this up, I haven't tried it out, so we are cooking outside the box here! The acquisition of wealth is no longer the driving force in my life.0

Some ideas on there. I've got some mini jackets in the oven now cooling so I can scoop a bit out, mix with cheese and refil, make a great snack. One day I might be more organised...........

two recipes i always do. and they are just scrummy.
first one , chop them up into about walnut size ( maybe bit bigger) then drizzle in olive oil and crush a garlic clove. and roast.
other one , chop them up again , and put in a roasting tin with chopped up onions , red pepper , yellow pepper , corgette and 2 crushed garlic cloves. then drizzle over olive oil and make sure all covered then sprinkle over dried mixed herbs. and again roast. absolutly scrummy.
also can just cook them in olive oil and dried herbs.
or rosemary and garlic.
i never boil them, only ever roast.
another recipe is when having a b-b-q add them the kebab stick's. but i do pre boil these. just so i know there fully cooked.
hoope this helps.0 -
I saw a lovely looking recipe I keep meaning to try, it was warm new potatoes mixed with a thick tomato type sauce (just enough to coat them) with feta cheese cubes, sun dried tomatoes, olives and basil mixed in. Mmmm...0

Hi sammy,
As we have a very recent thread on new potatoes I have merged your thread with it to keep all the suggestions together.

A bit similar to previous posters but if we have a barbeque I boil the new potatoes as normal, when cooked run cold water over them to stop them cooking further. Then I cover them in garlic olive oil for an hour or so, thread them onto skewers and barbeque them. Lovely.
Apart from that just have them boiled with some fresh mint, sometimes plain somtimes with butter on, or make them into potatoe salad. If using jersey royals I would definately have them just boiled.0 -
This recipe is amazing - try it !!
Danish hot potato salad
panful of new potatoes cut up and cooked
1 can Campbells condensed celery soup (trust me)
1 Onion sliced
streaky bacon - however much you like - I tend to use around 8 slices
1 tablespoon white wine vinegar
1 to 2 teaspoons sugar (taste)
splash of milk
Fry your onion and bacon till cooked
Add celery soup, vinegar and sugar
Add cooked potatoes
Add enough milk to make a consistency you like
Every time I make this for friends they rave about it - try it - its scrummy
I always do it for BBQs but it goes well with pork chops or grilled chicken too - or as a lunch snack on its own
Mmmmmmmmmmmmmmmmmmmmmmmmmmmm0 -
I love new pots!
By favourite way of serving them is to:
Boil them, drain, put them back in the pan, chuck some fresh herbs in (dried are ok too), a dash of olive oil, some brown sugar, balsamic vinegar and a smidge of butter. Put back over the heat for a few mins, and push them about to glaze the potatoes. Lovely!:beer:0 -
How about classic potato salad - boil and cool potatoes, mix with chopped spring onions and mayo and serve with buffet..0
