    Roast chicken dinner yesterday.

    Stripped the carcass last night, broke it up, put into large freezer bag and into freezer for next batch of chicken stock. Left-over gravy is also frozen in a container and can join in the next chicken casserole.

    Tonights tea will be pasta and chicken with some sauce or other.

    Small amount of left-over mash has been turned into potato cakes for lunch - served with the last 2 eggs (use by 31st May). OH is now licking his lips :drool: - think I can find him a couple of 'twinks' if he's still hungry.

    DS1 came home from his camping holiday yesterday and landed me with 3 (yes 3!)Honeydew melons plus I've already got one Galia melon that I bought at the weekend. I'd love to know how many melons he actually bought, in order to be landed with 3 leftover on the final day of the holiday!

    Has anybody got any ideas on what to do with 'melon overload' :confused: ?

    He also brought me a pack of that gorgeous Sarah Nelson Grasmere Gingerbread - yummy!

    Chop the spring onions into the soft cheese and mix with some yogt. Makes delish dip. Or alternatively, I would put them into my zip lok bag in the freezer, ready for stock making. Added a couple of chicken bones (non chewed of course) to my soup bag at lunch time, mother looked at me slightly strangely, but then went on to tell me about some soup she had made.

    Last week I used some ropey old potatoes, that I would've normally thrown away, to make mash. I picked out the best of the bad bunch, but I still couldn't bring myself to throw out the really shrivelled ones. Well, I've just made another lot of mash with the last of these potatoes and only had to throw a couple out that had started to go green. Both lots of mash tasted fine.

    It's a pity I didn't think about food waste earlier, maybe we wouldn't be so hard up now!!

    Was thinking i might make some potatoes into mash and stash in the freezer for later in the summmer, as neither dh nor ds are keen on new potatoes...well only swimming in butter!

    ive got 6 semi soft pears that will need eating before the rest of the fruit can i make a sort of crumble with them do you think?

    Fizzel, I don't know if ou have the stuff in to do this but I like sliced pear with natural yogurt on top, drizzled with honey and flaked almonds.
    Makes a nice, cheap healthyish dessert :)

    Salsa:
    1 mango skinned & diced
    1 red chilli, deseeded and chopped finely
    1/2 small red onion chopped finely
    3 tomatoes, deseeded & chopped

    Just mix it all together :)

    was trying to make something using what i have here, if i go to buy yogurt i will end up buying more than just that

    You could cook them lightly, then puree and freeze in portions. Does go a wee bit runny when defrosted but great to pour over yogs/ice-cream/creme fraiche. I often puree/freeze pears like this to make a fruit sauce for DS. Or if you like porridge you could try cutting some through that ?
    You could make pear crumble, like apple, just add less sugar I imagine as pears are sweeter, and freeze in portions. Not made this but I cannot see why not. Just bear in mind if the pears are soft they won't need much cooking at all.

    Ok, here is a challenge. I have two snowballs- the cakey ones with jam in and coconut on the outside. BBE 20 May. DH refusing to eat them, are they safe ? Any ideas how to incorporate them into any sort of dish ?
    I always understood BBE meant best before but ok afterward- just quality not guaranteed so much- is this correct ?
