    Feeling very proud of myself!!

Decided to have an 'empty the fridge day' to see what was left lurking and came up with various veges etc of indeterminate age.

Anyway, ended up chucking several sliced peppers, the remains of a punnet of cherry toms, plus a few cooked old new potatoes (is that an oxymoron???) some cooked and crumbled bacon together with a few mushies and a packet of passata into an oven tray and roasted the whole lot together...and I HAVE to say, it was soooo delish that I might well do it again...!!

Y'know this using up odd bits of old food is actually terrific fun!!!

    Hi peeps

I have 4 carrot & corriander muffins that I made today, however, I forgot to add sugar to the mixture, hence the muffins don't taste right, any suggestions what I can do with them?

Are they savoury enough to have with cheese? Sounds like a nice lunch to me.

If they don't taste savoury what about making a trifle & using them instead of sponge in the bottom?

I think I'm quite a thrifty cook anyway, and don't throw much away, but I am being stumped by some dessicated coconut and some mixed peel (also from Christmas) and a couple of tins of chickpeas. Any good ideas for these? Not necessarily in the same recipe, but brownie points if you can!

Re the coconut - look on my blog - click the "food" link on the right-hand column under the "labels" section and look at the 24 May entry (currently the 2nd one down under food entries). Its a recipe for coconut milk - coconut milk is useful ingredient for curries.

Actually i was just looking at the recepies and it got me thinking, is there are staple products i should make sure i always have in so that i know i can always make a meal with it? Sorry if that sounds really dumb, but i've never really thought about food in this way before.

I know that its probably a good idea to have pasta, rice and potatoes in but am a bit lost after that. If anyone could point me to a thread or give me some pointers that would be great.

Pasta, rice and potatoes is good. Also:

    noodles
flour (in my case that means wholemeal breadmaking flour - you might want different)
    couscous
dried sultanas or dried mixed fruit
    basic type cheese (eg Cheddar)
    eggs
    canned tomatoes
2 or 3 cans of different beans (eg haricot, chickpeas, kidneybeans)
some mixed nuts (buy in a large packet and split into serving sizes and store in freezer)
    milk
porridge oats (think porridge, flapjacks, etc)

    apples
    onions
    garlic

    soya sauce
    yeast extract (eg Marmite)
    suitable stock cubes or powder
    mixed herbs
    mixed spice
    curry powder or paste
oil (in my case olive oil, but you could use sunflower oil)

    Morning!

Those muffins with tarragon....if they are savoury, how about making them into:- 'croutons' to have with a lovely tomato soup
crumbled on top of a 'shepherd's pie' effort, but made with chicken
    herby dumplings in a casserole

    Or sweet:-
    served warm with custard
use for crumble topping on summat like rhubarb
sliced into disc shapes & soaked with either a bit of booze or the juice from tinned fruit, as a base for trifle
!!!!! holes over them & drizzle with a little booze, fruit juice or very thin glace icing & leave them to soak

I've got the recipe for something that tastes similar to a well-known coconut chocolate bar if you would like it.

    200g Condensed milk
    100g dessicated coconut
    8oz icing sugar [approx]
    8oz chocolate of your choice

    1) Mix first 2 ingredients.
    2) Add enough icing sugar to make a stiff dough.
    3) Form into desired shapes--small ping-pong ball is good--& leave on a baking tray to firm up.
    4) Refridgerate, over-night if possible.
    5) Melt chocolate & cover the coconut mixture. Leave to set.....that's the difficult bit:D

  • Hi everybody,

this is my very first question on this forum. I wonder if anyone can tell me if it is safe to use potatoes that have started to sprout. This sometimes happens as I tend to buy a bag and never use them quickly enough.

Someone told me they cannot be used.
Hate to keep throwing them out, know I should buy fewer at a time but live in the country and don't have access to shops everyday.

Empty Purse - I find that soaking tired greens, carrots, asparagus stalks, lettuces, etc in cold water for a few hours really perks them up. Just cut a small piece off the stalk ends where they have dried up so that they can start drawing up liquid into themselves again.
