I've got a very small amount of coconut milk left in the fridge. It's already been frozen once so can't go down that route. Any suggestions [not enough to use in a recipe]? Wondered about trying it out in a cup of coffee or adding to the small person's hot chocolate. Don't really want to waste it.

I've still thrown nothing away, as per usual. This has meant eating beans on toast 6x in the past three days just to get through the small loaf I bought. And I've still got some slices left, so it's cheese sandwich for tea or cheese on toast. Or cheese and beans on toast.0

Sorry I've only just caught up with the thread and realised that I've been asked for my chickpea and coriander curry recipe:
This serves 2
1 onion
1 garlic clove
1 tbsp oil
1 tbsp med curry paste [I use a couple of tsp of curry powder if I don't have paste or any leftover curry sauce from SC recipes]
14oz can chickpeas
2 tbsp tom puree
1oz creamed coconut
fresh coriander [can use dried if necessary or I buy the fresh when reduced and freeze it]
Fry onion and garlic. Make coconut into a soft paste with hot water. Put all the ingredients except coriander into a pan and heat gently. Stir the coriander through at the end. I serve it with naan bread or toasted pitta breads if funds are tight.

Why don't you freeze the loaf and take it out as and when you need it instead of trying to munch through a whole loaf ???
Beans on toast (as yummy as it is) must get a bit tedious after 6x in 3 days !!!

If it is only a small loaf and you get fed up of beans on toast , you could make it into breadcrumbs and freeze them. Then anytime you're making a dish that requires a grated cheese topping, mix the cheese with your breadcrumbs. Food wasted Thursday, Friday, Saturday: NOTHING (Now 4 days in a row)
Think I've got the hang of this.We've eaten all of our fruit and veg, and the fridge is empty - ha ha, no way can we waste any food :rotfl:

with the left over bread could you not make a bread and butter pudding its a gd way to use stale bread and taste better with old bread this works for many things like croissants, doughnuts, tea ckae, hotcross buns and brioche to name a few and is very yummy its how i use anything thats slightly past being eaten as bread etc as is slightly stale0
