    Google for a recipe for French Onion Soup. Bit of grated cheese on top and some crusty bread. Nice lunch - job done.

    Hi everyone
    After shocking power cuts over the past week, we've had to dispose of some food. We have kept that to a minimum and only thrown out the risky stuff ie chicken. we need to build our stocks of things up again.
    This morning I am shredding and freezing beetroot-I love shredded beetroot in my salads for my packed lunches/bento (whichever one I'm doing that day). Last night we saw that our potatoes have started to look a bit sad, so started the use up with making (and eating) a load of wedges, soaking in water for an hour before cooking to perk them up a bit. The remaining potatoes will be made into mash portions this afternoon-one retained for dinner tonight, the rest to be frozen.

    Once I'm ready for the day I'll be going through the fridge, ready for the grocery delivery this morning. Will make a list of what needs to be used up and then working through all of that. Pretty glad that I picked up a food processor a while back as it's coming into good use right now.

    Mappygirl - Using up onions: A nice way to use up lots of onions is to make Mushrooms a la Greque. Fry lots of sliced onions with sliced mushrooms & a little chopped garlic until soft. When cool, drizzle in some Balsamic vinegar. This freezes well and is delicious either mixed in with pasta, or served with cold meat to use up the leftovers of a joint.

    Loving this thread, since i started paying more attention to my food stocks i seem to be making my grocery budget stretch a bit further. Seems sensible really:o I am on my 6th no spend day on food, and i have nothing needing used up at the moment so very pleased:D

    I've also found some biscuits for cheese lurking in the cupboard, they're just out of date. Any idea's of how to use them up?

    Hi Kippers. You can deep freeze ham. Just put how many slices you want to freeze into a freezer bag and Bob's your Uncle. They keep for about a month but could be more. I used to waste so much ham, till i started freezing it. Now saved a small fortune.

  • Not doing too badly, the main snag seems to be my bin is filling so slowly it gets a bit whiffy before it's full :eek::o

    Soggy veg I don't mind (leek and potato soup is on the books as soon as I have freezer rom) - but what about tofu? I have an unopned pack use by 01/05/08 -should it still be okay? I'm not familiar with e.g.if it smells when it goes off etc...

    I really want some rhubarb but it's so expensive, I've "treated" myself to cheap apples and bananas this week, but it's looking like fruit will be an occasional thing from now on :(

    Hmmmm......well I havent tried anything like it....But I am wondering whether you could try crumbling them up (put in a bag and hit it with a rolling pin - or bottle). Then maybe mix them up with a bit of grated cheese, few seeds perhaps (if you have any), few grated nuts perhaps (if you have any). Then using this mix as a sort of "crumble" type topping for some leftover cooked veg. Drizzle a little oil over the top and then put a little bit of extra grated cheese on top of the lot and a few slices of tomato and grill a couple of minutes till brown.

    Honestly no idea whether this would work or no - but might be worth an experiment to see? Its just an idea straight off the top of my head - so might be a mess, might be lovely - no idea at all.
