    If you are worried about it being greasy, let it chill overnight in the fridge and all the fat will rise to the top and set hard. You can then just lift it off and use for roasting veg, (I freeze the fat if roast veg not on the menu). The stock that is left will be, non-greasy, VERY tasty and nutritious (sp?)...Enjoy! :j

    Last night we had lasagne made from various opened and ancient packets of the dried lasagne sheets, plus amongst other things, a very ancient tin of chopped tomatoes.

    Used up a whole block of mild cheese in the sauce (DIL gave me a load of stuff from her fridge as they are away now for 2 weeks...we never eat mild cheese so it was a way of disguising it!) and served the whole lot with a salad made from all the stuff in the fridge that was on it's last legs.

    Now, usually I would have composted the veges, but with the lasagne, it fed 5 adults and a very hungry 8 yr old!! All I actually spent to add to the stuff we already had was 2.50 for the mince, and around 70-odd pence for the milk for the cheese sauce!!

    I LOOOOVE this money saving lark...it's actually great FUN!!! :D :j :j

    Editted to add; I have another convert to the cause...usually, my DIL will throw out everything perishable in her fridge if they are away for more than a couple of days. THIS time I managed to persuade her to bring the whole lot to me since she was passing anyway. The amount of stuff she would have thrown out was criminal.....

    Hi :) Would this be the best place for me to post a list of all the food I have? I am doing the GC and need to use up everything in my fridge, freezer & cupboards before I go near a shop again!

    I thought if I wrote up the list some lovely people could suggest recipes and meal ideas, but can start a new thread if that's more appropriate?

    A couple of things I like for using up leftovers:

    FOR LEFTOVER COOKED VEG
    Eggah - for 2 portions worth I fry up a couple of medium onions and mix them with the leftover cooked veg (could even add a little cooked rice) and put this in bottom of flan dish. Then beat up 3 eggs, little milk, dessertspoon or so of flour and seasonings. Pour this "sauce" over the top. Grate a little cheese over the top of this and bake in oven - would think say 15 -20 mins at 200C.
    (Serve as lunch dish with salad and jacket potatoes or nice bread).

    IF YOU HAVE TOO MANY EGGS
    For 1 portion I would fry up 2 eggs in a frypan with some tomato puree squeezed round them and have with nice bread and stuff like black olives and/or feta cheese and/or pickled cucumbers.

    For gawds sake nobody post who got voted out of the Apprentice - I have just got home so won't be watching it until tomorrow.

    Sent OH to Asda the other day for salad stuff. Only salad left was one bag of ranch salad (full of very finely shredded mixture, pack of salad dressing and some croutons) but I mixed it up in a bowl for that evening's meal. Definitely not to my tastes and had to throw the majority of it away - OH ate his (just about!). I think it may have got eaten, if I hadn't put the dressing/croutons on it.

    That's all that I've thrown away this week - as well as some uneaten catfood (Tiggy-tiger is off his usual meat and gravy due to the very hot weather!)

    Today is payday :j - so off to Asda this evening straight from work - I'll check out the 'whoopsies' on any indian/chinese meals to save on cooking when I get back.

    Wonder how much the bread has gone up by THIS week?

    Retrieved 4 random bananas in their skins yesterday from the freezer and whizzed them into ice cream. OK, not my fave, but 'free' since they would have other wise been chucked out 1 by one.

    Also made the scandinavian apple pud, used uninteresting apples plus redcurrants.

    Had pastry(HM ) lurking in the fridge, so made that into pasties with leftover dhal curry. Accompanied by left over spicy rice.

    Not sure about today, maybe mushroom risotto. Have mushrooms in the fridge that have been there since Saturday. Still lots of apple pud in the fridge.

    I'm really loving this thread! The key to success seems to be checking the fridge EVERY day.
