    I have a small piece of brisket left over from last nights dinner and I'm just about to turn it into two small cottage pies, I will mince it up in my small kenwood mixer and add a few mixed veg to streetch it a little and have two single portion pies to go into my freezer by tonight.I bought it for £2.00 reduced a couple of weeks ago and cooked it yesterday in my SC it was delicious and my friend and I had it last night for dinner with mash and veg so 4 meals for £2.00 to me is quite a bargain

    Had a lovely roast free range chicken dinner with all the trimmings yesterday which yielded:-
    2 pints of ham stock to make into lentil soup
    2 pints of chicken stock made into soup with added roasted vegetables and chicken scraps.
    Enough chicken to make a chicken & mushroom pie.
    Enough ham to make ham and butternut squash gratin.
    Some roast potatoes to slice and fry to have with poached eggs for breakfast.
    So that one meal for 7 of us will also give at least 2 more meals for 3 plus oodles of soup for lunches, suppers and snacks. Yummy, Silver

    Last night I had some pastry left over from the coconut tarts I made on Saturday. I kneaded in some grated cheese and made cheese straws with it. OK, it only made 6 really small ones, but it was an interesting addition to an otherwise boringish salad. :)

    Use ups this weekend - some sourish milk to make scones, a butternut on the turn to make squash and corn soup (5 portions), 4 black bananas in banana bread and flapjacks, some overripe pears, nectarines and blueberries in a crumble and some stale white bread and last christmas' marmalade in a bread and butter pudding! Yum!

    I have a question about my butternut squash :D

    Last weekend while the oven was on I put in a butternut squash covered in foil to roast. When it was done I left it in the oven, covered, until I'd cleared away the tea things.
    I mustn't have used the oven for a few days, roll on Wednesday I come to use the oven and there's my butternut squash sat there all alone!! :D
    So it had been there from Saturday evening til Wednesday midday ish LOL. I wasn't sure if it would be ok or not and was in a hurry so I scraped off the top layer, scooped it all out and froze it in baby meal sized portions.
    I am now asking for advice on whether or not it will be ok to use for my 9 month old!!

  • Hi there, I've been a lurker on here for a few weeks now and although I would consider myself to be quite good with the food I buy, this thread has made me realise that there is always room for improvement. Anyway yesterday I discovered a wrinkly plum and a wrinkly apple in my fruit bowl. Before I would have thrown these away but I thought "mmmm what could I do with these?". I chopped them up, threw in a handful of raisins, sprinkled with some sugar and some cinammon and zapped them in the microwave covered with some crumble mix. Put in oven and then served with icecream. Served four people and all from a wrinkly wee plum!!

    Love this thread and now look at food as a challenge. Its actually quite good fun.

    Well the chicken stock plus chicken scraps plus lo roasted ratatouille from yesterday has made about 6 pints of soup. I'll have to freeze some or we'll look like chickens before we finish this lot :)
    Going to make lentil soup and freeze that as well.

    I have a big pack of chicken thighs and a tin of condensed mushroom soup. Does anyone have an idea of what I can make in my slow cooker? I have plenty of veg and herbs and spices I could chuck in.

    Hi Mummyjane,
    I am going to cook ChocClare's Chinese chicken recipe tonight for dinner as everyone is raving about it. I use tins of concensed mushroom soup to make leftover cooked meat into a mixture to go with rice or baked potatoes.

    I now have 3 large tubs of chicken soup in the freezer. It was our supper yesterday evening.
    I also made the ham water into lentil soup and have 2 large tubs of that residing in the freezer.
    Today's lunch is going to be chicken, vegetable and lentil soup:) Silver x
