Leftover chicken is lovely in a chicken pie, just make a cheese sauce or any white sauce, or white wine sauce...or similar, mix in the chicken and lots of lovely veggies and top with either mashed potato or a simple HM pastry. Yum yum!
My leftover victory this week has to be Red Cabbage Coleslaw. Shredded red cabbage, grated carrot, thinly sliced apple and slices of spring onion tossed with lemon juice, mayo and a little bit of oil. Season and have with anything. Lush...:)

Ive got some chicken to use, I was going to make risotto but I fancy a pie and ive got sme puff pastry to use up. I want to try and bulk it out though with some preferably cheap veggies so I've got enough left to use in a risotto tomorrow. Has anyone got any good suggestions on making it go a bit further. That will be the first ever time I've got a chicken to last 3 meals0

don t you find youmake some wonderfuland tasty new concoctions for instance yesterdayas im dieting aswell had a rivita and used up old ham the fridge spread the rivita with a cream garlic cheese spread and topped it with ham delic used up old stuffin the fridge saving money and losingweight yippeeee.0

I used a few bits and bobs of leftover meat to make a pasta sauce. I cut 3 sausages up, a couple of rashers of bacon and some shredded roast chicken thigh meat and fried it a little in some oil, then added a chopped onion and a tin of tomatoes, some tomato puree, paprika and garlic powder, a few dried chilli flakes and let it simmer for a bit until the sauce got thicker. Mmm, it was bliss, and there's a little bit left over for lunch tomorrow...

Mushrooms are good to bulk out a chicken pie, plus loads of carrots, spinach...any casserole vegetable really!
Remember to boil up the carcass for stock

tiny portion leftover spag bol, end of chorizo sausage and one chicken breast, one wrinkly pepper and a few left over mushrooms will be turned into 2 large pizzas tonight (with onions and cheese)0

i ended up chucking a leek and some mushrooms in, it was lovely! I also instead of making one big pie and eating the lot made 4 small ones for 3 of us then if anyone wanted more it was there but as it was one each was fine so dh has got it for lunch today!
Going to use the remains of chicken in a pilaf tonight, yum.0
