    Made chicken stock on sunday (chicken eaten on Sat) and together with the left over chicken have made risotto. This is a first for me; I have made stock and used in in soup but this way I get a full meal from leftovers including enough for the freezer and a couple of lunches.

    I grow soft fruit in the garden so often stew up a batch from the freezer. I also make stewed apple & sultanas, or stewed rhubarb & stem ginger and regularly find I have small quantities of cooked fruit left over which arn't really enough to make a dessert for two. These leftovers are ideal for stirring into a Chivvers Fruit Jelly (any flavour) before it sets, for making a light and interesting dessert. Odd wrinkled apples, oranges, grapes, etc. can be used in the same way but don't ever put PINEAPPLE into a fruit jelly because it contains enzymes which prevents the jelly setting.

    Found an unopened but rather squashed Jamaica Ginger cake in the pile of goodies from daughter's flat move. (last week).
    Stewed some rhubarb (reduced to 9p) with some lemon juice and orange juice from daughter's also left over goodies.
    So I put the rhubarb in a dish and have crumbled up the Jamaica cake on top and sprinkled with sugar.. now in the oven.

    had it on an egg mayo salad last night!

    were having somethingout of the freezer tonight. the labelis lost. whateveritis itshomemade its either pasta sauce,soup or curry.will have to await til it thaws

    Just a note

    My recipe for Bakewell Tart works just as well if you replace the ground almonds with dessicated coconut !!!

    Is really yummy both ways !!!

    They freeze whole just fine. Then if you want to grate the rind off it's much easier straight from frozen. I use them in cooking - grate the rind, then leave to defrost for a couple of hours and squeeze the juice out as normal. I bought quite a few reduced ages ago and just couldn't be faffed grating and squeezing them all at once so just shoved them in whole.
