    we had a BBQ on Monday, so today it's baked potatoes with toppings left over from that. Mine is unadventurously cheese & coleslaw, but hubbies is shredded chicken thighs mixed with finely sliced spring onions and cheese.

    I am using Monday's left over chicken (carcass and one leg) to make homemade chicken soup. I add water carrots, onions, thyme, chicken stock cube and handful of barley. May add a couple of potatoes cubed. I Make this not particularly so as to use up whats left in the fridge but because we love it. Even better than Monday's chicken roast dinner.

    I made spicy chicken rice and beans with the left over roast chicken the over day it was delicious!

    Hiya

    Scalloped potatoes are sliced potatoes baked with milk, flour, cheddar cheese, and butter as far as I know. No doubt there are variations of it though. :D

    Well, my good start went a bit wobbly over the weekend as had my small nephews to stay. Had a fab time, but threw away half a plate of beans on toast (nobody's going to fancy those when they've been squidged around for 20 mins by a 2-year old!), one fajita (did a Mexican buffet which went down a storm but my 7 yr-old nephew enjoyed choosing his fillings & rolling fajitas so much that his eye was bigger than his belly & a whole one got thrown away (it was well-mauled by then!) Also threw away half a bowl of home-made hummous as discovered that small boys tend to dip things in that they've already sucked!) All other leftovers from buffet recycled into next day's meal & chilli frozen for later in the month. Just got a tub of carrot & celery sticks to use as they're a bit bendy but they're going in tonight's butterbean crumble which I'm serving with stir-fried garlicky cabbage as just found one right at back of veg rack that's past its best. Leftover cream & leftover broccoli from Friday night saved & will be turned into cream of broccoli soup. So feeling virtuous again.....for now x

    Oh..... & do I have to count a glass of red wine that was wasted when 2 yr-old nephew decided now would be a really good time to push the table over? Am hoping you'll let me off that one!
