    Hi,

    Does anyone have any ideas for quite a lot (about 300g) of course cornflour? I'm not a huge fan of making it into polenta pieces and frying but can be persuaded if necessary! We're veggie too

    It's been a while since I've posted on this thread but for some reason I get an update every so many months.

    Corn flour one possibilty is tortilla wraps that should keep for a while frozen.

    Apparently corn flour is masa harina.

    I use polenta to make a coating for chicken strips. I mix it with some finely grated parmesan and some cayenne pepper (or paprika) and then dip chicken strips into egg then into the polenta mixture. They can then be either oven baked or fried in a lightly oiled pan. They are lovely served with pitta bread, salad and HM coleslaw.


    mmmmmm haven't made these for ages but now I will definately have to!!

    some good ideas there, thank you! Will have a go at the tortillas next time we have a load of fresh veg in - I hadn't realised wraps were quite so easy to make! :money:

    Had a bonus at my training day today and brought home - pinwheels,scones,party pies and grapes.All in packed lunches for tomorrow or frozen or next time.
    Sandwich grilled the last 10 tortilla's from the bottom of my fridge into pizza's with garlic,herbs,vegemite and mango chutney - a selection for all.Cut into wedges,frozen in ziploc bags and reheated in 30 sec in the microwave,served with soup,bolognese,curry or popped into packed lunches.
    Had leftover roast pork,mash and veggies for dinner with redced vanilla creme yogurt and chopped up fruits.
    Training for the next 3 days so my takeaway container/swill be coming along with me!

    I reckon I could do with being a bit more aware about my food wastage so I am challenging myself to throw away no food at all in June. Or as close to no food as possible (given that I am a lousy cook and will no doubt burn something) :D.

    The rules are...

    1. Feeding it to the dog or composting it or anything else that isn't actually using it as people food also counts as throwing it away.

    2. Baking stuff to give it to the neighbours is within the rules coz humans still ate it.

    3. Any wasted food needs to be logged on the thread.

    Anyone wanna join in?
