  • I thought it might be fun to take the 'use up the leftovers' thread a step further. It crossed my mind the other day when I found myself cooking and eating things I would have in times gone by, thown away.

    Instead of peeling the butternut squash and throwing away the seeds I cooked it with the skin on and it got eaten with the flesh, roasted the seeds which we had as a snack and then added the rest to a home made loaf.

    Obviously I don't advocate practices which fall outside basic food hygiene rules but I wonder if any of my fellow OSers have done anything similar?

    p.s. I also have a system now that means very little food ends up in the bin, ie eat it, use as a leftover, offer to the dog, compost it...bin!

    Hi desperate housewife,

    One of our favourites is to make crisps from potato peelings. Just toss in oil and roast in a hot oven.

    As the leftovers thread works on exactly the same principle as your post, I've added your thread to it to keep the replies together.

    Hiya

    I posted this in the Grocery Challenge but wondered if I might get a few answers here instead? xxx

    Does anyone have any ideas what to do with instant porridge mix (the fine stuff) we don't have time in the morning to make and eat porridge but I didn't want to throw it away?

    Also, I've found some odds and ends of chocolate (advent calendar chocs etc) and have no idea what to do with then other than just eat them :rotfl:

    Hi shortie,

    I made these cereal bars yesterday using porridge oats. I think the instant mix would be fine to use in the recipe and they're great for 'grab and run' breakfasts.

    My use up tip is for leftover whipped cream. I stirred the remains of a jar of hm lemon curd into it and then froze it. It's made a very passable icecream and tasted scrummy!

    I had a rummage through the veggie drawer today, I bought an aubergine yesterday but found in the fridge a lot of tomatoes, some sad looking courgettes, and some wrinkly peppers. So I chopped them up threw them in a couple of ovenproof dishes along with an old onion and some garlic, poured a bit of olive oil on and cooked in the oven. Yummy veg for tomorrow nights dinner and some for the freezer too.

    I often do this when I get those types of veggies in the organic veg box; I then add it to curries, stews, even mince dishes as it all sorts of blends in and adds in extra veggies without them standing out.
    My self & hubby; 2 sons (30 & 26). Hubby also a found daughter (37).
    Eldest son has his own house with partner & her 2 children (11 & 10)
    Youngest son & fiancé now have own house.
    So we’re empty nesters.
    Daughter married with 3 boys (12, 9 & 5).

    I made a tasty potato salad with left overs from the weekends roast

    new potatoes cooked and cut up into smallish pieces
    chopped up left over gammon
    chopped spring onions
    chopped peppers ( i used red and yellow)
    dressing : low fat natural yoghurt, a teaspoon of mustard ( i used dijon) and some mayo all combined together
    combine veg and meat and drizzle over dressing
    nomnomnom
