    This might be a bit obvious - I have a full chicken leg left over from a roast chicken, I've already had a pasta bake for 2 days with left over chicken and a stir fry and I'm at a bit of a loss as it's chicken curry tomorrow and a bit sick of chicken now!

    Managed to rescue the left over chicken from OH - he was going to pile it into a sandwich (for a snack)!:rolleyes:

    Mixed a tablespoon of Wing Yip Chinese Curry paste with a drop of water to soften it, then added a load of mayonnaise, a finely diced red onion, couple of tablespoons HM mango chutney and the chicken. It was delicious:D.
    Piled on jacket potatoes and served with a large salad, it easily did 2 huge, piggy portions. Tea for (almost) free.:j Job's a good un!!:D

    ooooooo - OH's are so good at doing things like that!

    I've now devised a whole host of hiding places for surplus scouse, chilli, casseroles, curries etc while they're cooling down. Need to be hidden from His Lordship, or they WILL be devoured before I get an opportunity to cool, chill and freeze for another meal.

    I would probably ditch it and wouldn't feel too bad about it if you've been ill. Then again maybe its cos I don't want to be held responsible for you throwing up with a bad throat.:D

    I'm guessing you have 3 options 1) Turn it into something else like make soup then freeze, or put it some kind of tomato sauce and freeze for next pasta meal.
    2) Give it away or invite a friend around for cuppa and a chicken sarnie.
    3) Throw it away:eek: :rotfl:

    Personally I wouldn't risk the mash. 24 hours earlier I'd have whacked it in the freezer without a second thoughts, but I think 4 days is just a little too long.

    Hope the throat soon feels better.

  • Had some left over chicken casserole, so I put it in a dish and cooked some pasta to put on top. Spread a tub of Greek yoghurt on the top with an egg mixed in to set it and then grated cheese over everything.

    Baked in the oven for half an hour. It was lovely

    Just what I was going to say! Also save it to boil in burnt pans - they clean up a treat.
