Guapa1, well done on using the carrots up - I'm taking notes and tips for me!

This week I haven't thrown any food away, getting better at last! :j

Here's how far I got with the chicken I cooked for mother's day.

Sunday - roast chicken dinner for 4
Monday - left over meat on carcass in a tomato sauce with pasta 1x portion
Tuesday - one leg into a chicken and sweetcorn pie topped with sprouting mashed potatoes 2x portions
Wednesday - Other leg made into a lazy chicken curry with jar paste and half tin of tomatoes 1x huge portion
Thursday - chicken stock made with bones and carcass, risotto made with stock easily 2.5 litres for soup
Friday Lunch - had left over portion of chicken and sweetcorn pie (will have something different for tea as a little fed up of eating chicken now!)

I can't believe how far this got and I didn't throw one bit away until the stock was made.

Off to sort something else out for tea and get somemore ideas from here!

This thread is really helpful. I have cut down on food waste substantially. I freeze ;eftover veg etc. I have been freezing mash and using it for potato scones at the weekend and they are very popular in my house.

Hi - I have got a huge amount of parsnips and carrots that need using up. All week I have had either curried parsnip or carrot soup so am abit sick of it. Any ideas what I can do? Thanks

In January had some parsnips left over from the festive season , so I made a parsnip cake. It was basically the same recipe as a carrot cake. It was yummy :D

Roasted parsnips and carrots, they are great! Add beetroot and onion for a really scrumptious treat.

Hello everyone. I hope you can help

I've a 2.5k bag of Scottish potatoes in the cupboard. They're starting to sprout and my odd DH will throw them out if he sees them. I'd like to do a couple of things, for freezing if possible. Anyone any ideas?

I shall put a couple of them in the SC with a curry mix and some chicken for tea tonight but am stumped for the rest.

Well, if you;ve got some spare space in your garden, dig a trench and plant them about six inches deep and you'll get a nice crop of free potatoes in the summer! simply cover the green shoots with more earth as they peep through to increase your potato crop.
Otherwise, rub off the sprouts, par-boil them and roast them, and then pop in the freezer so you can have roast potatoes just by thawing in advance and putting in a hot oven for 10 minutes.

Hiya, I'm new to this thread and I'm not exactly known for my culinary skills! I've just cooked half a shoulder of lamb in my SC with some red wine, garlic and onions. I'm going to use the lamb, garlic and onions to make a curry but I wondered if there was anything I could do with the stock thats been left? I've used chicken stock before to make soup but not sure if I can do the same with lamb stock?? Thanks in advance!
