OK Guys! Lots of brownie points today, please
Had quite a few sprouting potatoes which have been boiled up and with the addition of some leftover marscarpone cheese, will make several batches of mash for the freezer.
Remains of Monday's cabbage - best bits shredded & cooked to turn one batch of mash into bubble & squeak (water from cooking added to stock pot).
Peelings from potatoes, remainder of cabbage, and a 'past its best' carrot simmering for veg stock as I write.
Leftover red wine heated to remove alcohol (won't freeze otherwise) and frozen as cubes for future beef casseroles.
EssexHebridean - you'll be pleased to know it won't be left on the worktop for K9 to steal, and yes, I'll remember not to use red wine when you and Mr EH come to visit (he's allergic to it!)
PS Also re-used mascarpone pot to freeze single helping of mash! An extra point for that please.'Better to ask a silly question than to make a silly mistake' Elliebee's Mum

Since trying to live OS I always freeze leftovers but there is usually only enough for one portion and as all 5 of us eat together i have not had chance to use them up.
WE now have 5 boxes so tongiht we are having:
Shephards pie
Lasagne
Pasta waith chicken in cheese sauce
spaghetti and peas in cheese sauce
I will give everyone a bit of each and add some veg to it - what a feast !
This is stuff that would in the past have gone in the bin or the dog !:TIt's not paranoia if they really are after you.0 -
Sounds yummy! I use all my single potion left overs as lunch to take to work. either that or it gets turned into something else with the addition of extra veg etc.0

thanks for the tip...i am not a big wine drinker and usually end up pouring half bottles of wine down the sink after i have made stew. i thought i couldn't freeze wine because of the alcohol. how long does it have to be heated for?Wins: 2008: £606.10 2009: £806.24 2010: £713.47 2011: 328.320 -
I do that some times too -leftover buffet. It's a free meal;)0

I brought it to boiling, then simmered for 15 mins or so. If it doesn't work first time, then you'll need to increase the time in future (& hey, you were going to put it down the sink anyway!). I assume white wine will freeze in the same way...........anyone tried it?'Better to ask a silly question than to make a silly mistake' Elliebee's Mum

Apologies if this has already been said somewhere else in this loooong thread.
Grapes that are looking a bit sorry for themselves make lovely hot puddings. Either on their own or mixed with eg apples, pears, plums, dates etc. Only downside is de-seeding of non-seedless varieties. Top with sponge, crumble or my personal fav (as so quick and easy), a suet crust drizzled with syrup then baked. Also in a sort of Apple Charlotte which also uses up stale bread/crumbs.0 -

Thanks for that, I'd never thought of using them all together before and sometimes struggle with what to do with only a small bit of a mains dish! :beer:0 -
I also put de-seeded wrinkled grapes into a fruit jelly to bulk it up, together with any chopped apples which are looking past their best. Avoid pineapple though, as it contains enzymes which will prevent the jelly from setting.0
