Leftover red wine heated to remove alcohol (won't freeze otherwise) and frozen as cubes for future beef casseroles.
We don't bother heating the wine, we just put it in a plastic box and remember to make sure it's the right way up in the freezer. Most of it will freeze and the juicy bits can be tipped in the first time we use it. I just carve a chunk out with a spoon.0 -

I dont use up all I cook in one meal, more often than not, what's left becomes part of the next one, automatically.
So long as I bear safety with regards to poisoning, all is well, and there are no leftovers.

Just made this delicious and very easy banana bread with some very black looking bananas- http://www.dooyoo.co.uk/recipes/baking/1013864/. It's the nicest banana bread I have ever made and the bananas would have gone in the bin otherwise so feeling very chuffed with myself.
Also roasted off some leftover butternut squash with some potatoes and veggie sausages for tea and it was lovely. Very pleased!:DYummy mummy, runner, baker and procrastinator0 -

That's possibly a better way to do it - I'd tried to freeze mine in an ice cube tray before realising it wouldn't freeze hard. Does it keep any less time because it's still slushy, or does the alcohol preserve it anyway?'Better to ask a silly question than to make a silly mistake' Elliebee's Mum

I know this is not really about leftovers but I want to get as much of next weeks food ready this weekend (so busy in week) do I roast pots then freeze and reheat, will they still be crispy. I know what to do with mash but not sure about roasties.

Hi, I don't usually post but am always lurking. You guys have so many FAB ideas for leftovers! I'm hoping you can help me with a question.
Have been clearing the fridge & using up all the 'bits' in there. I found some fresh pasta which I bought before Christmas. The use by is 12/1/09 but I opened it before Christmas and it says once opened use within 3 days. It looks and smells OK but I don't want to use it if it is going to make us poorly.
What do you think - should I use it?

I brought it to boiling, then simmered for 15 mins or so. If it doesn't work first time, then you'll need to increase the time in future (& hey, you were going to put it down the sink anyway!). I assume white wine will freeze in the same way...........anyone tried it?
I think you will find that it would....can't see why not anyway. I'm still trying to get my head around the concept of "Leftover wine"......?!
In case anyone hasn't twigged, Elliebee is my Mum - and I have to confess to being in stitches at all this OS goodness going on! Extremely proud of her though - I always told her she was a good cook and she's never really believed me I don't think.... :T She ought to though - her casseroles whether with or without wine, are gorgeous!
I have dragged a pot of blackberry and apple and a piece of leftover shortcrust pastry from the freezer and will make a pie tomorrow. I suspect there is not enough pastry to do base and top so will use some of the packet of puff pastry in the fridge - the remains of that might make pasties of some sort - Maybe cheese, onion and potato.
