Yes, I've used potatoes without peeling them for soup, especially in leek & potato soup. When a soup is blitzed to a purree with a stick blender all the potato pieces disappear so it's both a waste of time and a waste of the nutrients in the skin to peel them first, We also used unpeeled potatoes as a topping for Lancashire Hot Pot. When sliced thinly you don't really notice the skin as the potatoes absorb the meat juices.0

All this talk of soup is making me feel hungry! I have lots of cooked veg saved in the freezer ready to add to the next lot of soup I make and I think that might be today!!0

Oh just remembered saved some rice from last night's dinner I think that could probably be added to the soup!0

Don't know if this one has been mentioned on this thread (it's sooooooooo long), but if we have leftover meat (and stuffing) from the sunday roast, it's frozen (usually thrown in a plastic container with that left from previous weeks - waiting in the freezer) and when we have enough, I make my kid's all time fave meal.....
Basically, I brown some onions and put them along with the meat/ stuffing in a roasting tin along with part boiled sliced spuds and cover with gravy.... kind of a hot-pot???
The kids look foreward to it!! but say the best one I make is with christmas left over meat cos then they get turkey breast, turkey meatloaf, pork, chipolatas, bacon and stuffing.......0 -
Hurrah - managed to use up a slightly sorry for itself savoy cabbage that had been sitting in my fridge since before christmas. My diary (The one they were giving away with Olive magazine at the Good Food Show) has a recipe for chickpea and chorizo soup with shredded greens - I had no chorizo but used bacon instead and very yummy it was too. I'm always looking for ways to use up leftover roasts. Monday is a busy night for us so I cook a huge roast with extra veg on a Sunday and we usually have the leftovers reheated on a Monday. I alternate this with doing rissoles (thanks to Penny Penguin's suggestion) and roast meat pies but your idea sounds like a winner.0 -
New to this thread, but have been reading with interest.
I was very good this morning, and grated some iffy cheese for future use as pie topping etc. It was delicious - at least according to 'small hairy person', who was found wagging her tail and looking very smug, having nicked it off the worktop before I'd had time to take it to the freezer :eek:

:rotfl: - reminds me of a certain story which Elliebee could also tell you, regarding a "disappearing" half pound of uncooked bacon and an extremely smug looking spaniel.......! Honestly - have you not learnt your lesson regarding putting things further onto the worktops?!
Had "mystery mince" with jacket spuds tonight - it's always interesting when labels fall off boxes in the freezer isn't it? Thankfully on this occasion the dish in question was clearly identifiable as mince....exactly how long it had been in there is another matter entirely, however as we're both still breathing.....Also took the chance to use up the last bit from a bag of salad. Tomorrow will be bacon, cheese and mushroom omlettes as I have an egg glut and a cheese mountain.(As well as half a pack of bacon and the remains of the weeks mushrooms...)
We did have to throw a few bits away from our storecupboard clearout last night I'm afraid - all bits that were a long way out of date and in the case of one bottle of Pepperdew ketchup visibly past eating. Three things all told - that bottle of ketchup, a jar of Bearnaise sauce got practically free at the Good Food Show several years back, and a jar of cranberry sauce from goodness knows when - again just a long way OOD and not looking too good. I hated doing it but genuinely felt it wouldn't have been sensible to even consider eating any of them. On the plus side I found a box of cereal I'd forgotten about - BBE Oct 08 but still edible - took that to work this morning to facilitate my plan of trying to eat breakfast more often.🎉 MORTGAGE FREE (First time!) 30/09/2016 🎉 And now we go again…New mortgage taken 01/09/23 🏡

The egg mountain and cheese glut are now slightly diminished thanks to omlette for tea. It was supposed to have contained bacon as well but when I took the rashers out of the pack they stank! Those will be going back to Tesco tomorrow night - I've taken the "Buy 2 for £4" sticker off and hopefully they'll refund me the full pack price. Making marmalade today. (Seville oranges have started to appear in the shops). Have saved up all my orange, lemon and tangerine peel over the Christmas period so I have lots of extra fruity skin pieces to add to the contents and make it even more tasty..
