carrot and coriander soup? That is what I normally do. Or simply freeze them, and then decide at your leisure.

Had to go back five pages to find this!! We must all be getting Sooooo good at using up our leftovers that we donl;t need to ask questions on the thread anymore!

I've got a load of carrots in the bottom of the fridge which I need to do something with - might have some with my lunch tomorrow and then slice, blanche and freeze the rest I think. Problem is OH doesn't like them (when he knows they're there!) so I don't get through as many as the veg box provides. I never did get around to using the final mango from the batch I bought reduced for quick sale ages ago so that had to go into the bin the other day.

Stopped in at the PYO this morning rather than buying strawberries in the supermarket. Didn't have time to do the whole "self-picking" thing but did buy two punnets of strawbs, 2 of raspbs and two of blackcurrants. Raspbs and Blacks are now frozen ready for use in future muffins, cakes, puddings etc. Strawbs will be eaten as fruit through the week. I knew if I didn't get straight on and freeze them immediately they'd sit in the fridge until they went manky! :rotfl:

I'm going to have a "marrow issue" this week as our veg box contained a massive one! It's too big to do as a normal stuffed one but I think I might bake half of it off with some savoury mince for one night this week. Hopefully the rest will go into stir-fry, etc etc! Can anyone offer any ideas as to the best way of freezing it if I can't use it all up? My gut feeling is that it would go very watery, and that perhaps there may be little point in trying?

I recall seeing a tv programme--many moons ago unfortunately--where a chap cut the last 4" or so off a marrow & put in a load of brown sugar, I think. I know it got sealed up with sellotape, then hung in the leg of an old pair of tights, cut end uppermost....not  what else went on, but it turns into a marrow wine.

Perhaps someone with better searching skills than I, can find out if I dreamt it:D

EH - I always end up with a marrow surplus when we return from holiday and I find most of my courgettes have turned into marrows. The good thing is that if they are hardened off they will store in a cool place for ages, but I agree, using them up is a problem. I tend to bake them cut in two lengthways with the seeds scooped out, and fill with rice and savoury mince, chile con carne, spag bol sauce, etc. You could try cutting bits into small chunks and mixing into a cheesy/pasta mixture with some frozen peas or beans to produce a version of pasta primavera. I confess though, I usually get to February and find I still have one or more marrows stored in the garage to use up. (My OH is not very keen on them either !)

You can make a jam with marrow. I once made a eggless lemon curd using marrow that was a war recipe i think. But i think its easy to find marrow jam recipes on the net anyway.

Hope this helps. Must find that recipe, want to make the lemon curd again, hope I still have it somewhere.

    I love this thread!

you're welcome bigMumma - I posted a recipe, I think, about 18 months ago but can't find it now. Never mind - that was more or less it! Enjoy :D
  • I found a huge tin of Marvel dried milk in the cupboard has anyone used it for milk puddings at all? as I have quite a bit of rice, semolina ect that I want to use up. I have to keep my protien intake up at the moment so I make a pudding every day. Does it really work well with puds? Plus if I have a pud after dinner I don't need such a big dinner if you see what I mean, double savings.I think when you see how those poor folk in Burma are coping the thought of throwing food out is almost obscene[/quote]

Hi, I only ever use dried milk for puddings and have found it to be fine. THe funny taste you get in tea and coffee seems to vanish when you add lots of yummy sugar, cinnamon nutmeg etc! Also use it to make pot and leek soup.
