    hi all

have got half a litre of unsweetned soya milk in the fridge that needs to be used up,anyone got any ideas.(dd is on a dairy free diet but oh bought the unsweetned by mistake and she wont drink it)

Make it into anything you'd normally use milk for, pancakes, custard, cakes whatever, believe me no-one will notice....I've been feeding my family and friends soya milk for years without anyone noticing!

The only key thing with soya milk is not to add cold soya milk to hot other liquid as it's quite likely to curdle, if you need to add the soya to something hot then warm the soya before you add it.

After providing a buffet last night, today I'm using up the leftovers creatively.
This is what I have left & what I'm doing with it:-
Bowl of salad & some bean pate will be turned into Minestroni soup.
Stilton cheese will be turned into Stilton & broccoli soup, I bought some broccoli to go with todays dinner so I could use the stalk in soup.
Sliced french bread will be turnedinto garlic bread or cheese on toast floaters to go in Ministroni soup.
Today we are having roast chicken which will then make chicken pies, chicken risotto & the carcase will be used to make stock for the next batches of soup.

A manky pear went into a rather out of date jelly for today's pud, but I couldn't save the peppers I'd completely forgotten about:o

Try blending it with strong flavoured fruit to make a smoothie (sweetened soy milk only has apple juice added), putting it in scones, or just try it in tea or coffee - it's really not that bad!!

    Mortgage-free Glee!
Only throw away food is a pain au raisin (covered in fluff!!!!) which was found on the floor of ex-dh's car after he visited! no way it can be used as a smoothie or anything else! Other than that i did have to compost the last 3 inches of a cucumber which had decided to make itself into a smoothie.

And talking of smoothies - I have three mottled bananas, but no liquidiser - will they mash into one? also have strawberries which could go in, and some juice/milk??????

    PO xx

if they're mottled, they're well & truly ripe :D should be fine mashed up (you could always try fine sieve or tea strainer) - I prefer milk but others like juice so I suppose it'd your preference or whatever you've got most of :)

Does anyone use peels and skins for making stock?

And do you keep veg water?

    Thank you ...

I have kept skins/peels for making stock and also kept the veggie water from cooking for using in soup making - can be poured into 1 litre bottles and frozen but make sure you leave expansion room. It helps to freeze the liquid before putting the top on the bottle.

I reckon the more flavour the better :D. I don't use a lot of water when cooking veggies - often do them in the microwave, or the pressure cooker, in a very small amount of water and it helps to concentrate the flavour. Carrots done in the microwave are the most fabulous flavour :D.
  • Had to throw away some chicken today as I had frozen it on the use by date and then we left it out overnight to defrost, spelt a bit funny this morning - should have put it in the fridge but you live and learn!

Better add that to the total - am going to have to try harder next month! Have reduced the veg box down to once a fortnight so that will mean we throw out less of the extra.

Everyone is doing so well, keep up the good work!
