    I make DH chicken and bacon (or ham if bacon wasnt in reduced section) pie

    I make a white sauce and chuck in the left over chicken cut up, and the bacon fried and chopped. Cover with a piece of puff pastry (waaaay to lazy to make my own) and pop in the oven for 35 mins (fan assisted). Hubby loves it, takes me 10 mins to make and is very warm and you can serve it with whatever you fancy :)

  • I make a simple chicken dish by softening half a leek in some butter in a pan, adding a couple of rashers of chopped bacon until partly cooked and then a couple of tablespoons of flour. I then add the chicken and enough milk to make a nice creamy sauce. Add a splash of white wine and some double cream if you have it. Season with salt and pepper and a little dried tarragon then simmer until the chicken is nice and soft.

    This works well with pasta or in a pie. It also works really well with ready made puff pastry.

  • We have roast chicken at the weekend and then use the cold chicken for foul pie! Fry some onions and/or leeks add the chicken, heat through and then add some mushroom or chicken soup. Put in a casserole dish and cover either with mashed potatoes or sliced if you have boiled or roasts left over. If you don't have any soup then you could just make a simple white sauce.

    We like it and it is great for a horrible rainy day like to day!

    I always without fail make 2-3pies with our chicken leftovers, normally cook extra veg with the roast, then all i do is throw the veg/chicken into a pyrex bowl make a chicken gravy and pop a block of rolled out puff pastry on top. Normally get 3 tops out of 2 blocks of pastry. Then they all go in the freezer for a meal when i'm feeling lazy. Have about 3 pies in there at the moment.

    Here is the ham jambalaya recipe

    Ingredients:

    • 1 tablespoon oil
    • 1 tablespoon butter or marg
    • 2 large onions, chopped
    • 1/2 green bell pepper, chopped
    • 1/2 red bell pepper, chopped (chilli pepers)
    • 2 medium cloves garlic, minced
    • 2 cups cooked diced ham
    • 1 cup uncooked rice
    • 1/2 teaspoon thyme
    • 1/2 teaspoon salt
    • 4 drops hot pepper sauce, or to taste
    • 1 can (14.5 ounces) diced tomatoes
    • 1/2 cup chicken broth
    Preparation:

    Heat oil and butter in a Dutch oven or heavy large saucepan; add onions, bell pepper, and garlic. Cook, stirring occasionally, until lightly browned. Add ham and rice; cook and stir until rice is well coated with oil. Add thyme, salt, hot sauce, tomatoes, and chicken broth. Cover and simmer until rice is tender and liquid absorbed, about 20 to 25 minutes. Taste for seasoning and add more salt and pepper sauce as needed. Serves 4 to 5.

  • I am one of those who is guilty of only buying chicken breasts normally.

    This week I bought a whole chicken in the Sainsburys 3 for £10 meat deal so £3.33 for the chook.

    I roasted it yesterday, picked off all the meat and then made stock from the skin and bones.

    From that £3.33 chicken I got 4 plates of roast chicken dinner (last night and tonight's meals), 2 portions of chicken & bacon pasta sauce (tomorrow night's dinner) and 5 bowls of lentil soup. 11 meals from 1 chicken (which said feed 2-3 on the label)!

    I'll be doing that again. Thank you to everyone here without this board I'd never have even tried as stuff like making my own stock seemed far too scary and complicated.
