    Hi zepsgal,

    Things off the top of my head are: chicken and veg pie, chicken fried rice, risotto, casserole, pasta bake, omelettes, salads, curry, sweet and sour chicken, chicken and spinach lasagne, peppered chicken with pasta, sandwiches for lunches etc. Don't forget to use the carcass to make stock for soup. The list is almost endless. :)

    More or less. I brown the bones in the oven (gives a better flavour), then pop them into a pan on the hob and cover with water. You can add any veg at this stage to flavour the stock (I keep a tupperware tub in the freezer full of vegetable peelings and stalks just for this purpose), but it's not strictly necessary. Bring to the boil, then simmer gently for 3-4 hours (can also be done in the slow cooker). Strain and you have stock to use in soups, sauces and casseroles. :)

    Chicken is a great standby in this house, we get through loads of the stuff :D

    I always freeze the remaining in portions.
    You can then defrost a portion say now for tomorrows tea.

    We then have Chicken curry, although I shamefully cheat and use Sainsburys Basic curry sauce, mix cooked chicken in and bung in oven for 30 mins gas mark 6 and serve with rice.

    Cold with new potatoes and salad - more likely in the summer to be fair.

    Re-heat in gravy, yes I know :eek: made from granules which you might not like, I mix in leeks as well with this. Then have with potatoes and veg.

    Mix cold chicken with sweetcorn and mayo with jacket spuds.
  • How about making chicken and veg pie for your DH and a veggie pie for you, making a chicken stock like suggested and using the stock in DH's pie.
    Or making a chicken and mushroom risotto, adding the chicken after you have portioned off yours...I'm trying to suggest something that you can make that will cater for both of you :-)

    I do a chicken pot pie; essentially any small bits i make a small amount of white sauce, heat the chicken through (make sure its piping hot) add onions, mushrooms, anything left in the fridge. Put that mix in the bottom Of a small ramekin with a lid (the very mini cassetole dishes you can get) make up a few spoons of instant mash, spoon on top & cook until browned in the oven!
    My OH loves these and it uses up any small bits you gave left and stretches the chicken :0) yummmm!

  • We had stir fry last night with onions and red and yellow peppers and a Blue Dragon sauce and I ate the last leg for lunch today with salad and mayo.

    Nothing left.
