  • Do you have a slow cooker? I just put all the bones, left over bits of skin and the not so appealing meat in mine with water, carrots, celery, onion, bays leaves, herbs and seasoning.

    Put mine on low heat and either leave it over night or whilst at work.

    Skim off any fat, strain the bones, bay leaves, skin and then i blend.
    Want to be debt free by Jan 2014 after letting things sprial out of control :o

    Oh and forgot to say if you prefer thicker, instant mash, boiled pots, pieces of bread will help to thicken it.

    I know this sounds dull, but it tastes brilliant. The second day get a loaf of really nice bread, like a baguette, some rocket and cherry tomatoes and ideally some just ripe avocado and lashings of mayonaise. Delicious. Especially if we had some summer weather. Actually second thoughts leave that to next spring and go with the slow cooker recipe, you'll want something warming!

    Hi all,

    OH and I had a lovely chicken roast dinner last night. Stripped the carcass and have enough for 2 more meals- also have some cooked potato left over. Was planning on chicken salad today but we've woken up and its freezing/rainy- salad just wont cut it!

    We also have salad stuff, eggs, potatoes, bacon, cheese and all storecupboard stuff. I've looked for a warming filling recipe but the index is overwhelming!

    Any amazing ideas?

  • I had lots of chicken left over a couple of weeks ago and I fried some onions with some harrissam, turmeric and a few other spices. I then put the left over gravy and chicken in with a spoonful of honey to make a middle eastern type stew.
    You could serve this with cous cous but I crumpled some filo pastry over the top to make a pie.

    I usually chop up the chicken, add it to a pan with some onions (plus other veg if you have it) to soften and brown. Add gravy remnants and/or stock, plus a dash of wine if it's around. A sprinkling of dried herbs or a little pesto is nice too. Stick the mixture in an ovenproof dish.
    Meanwhile, make some mash as you normally would, then slather it on top of the chicken mixture, dragging a fork over the top. Gas Mark 5 for half an hour or so, so it heats through and gets cripsy on top.

    We usually fry onions, mushrooms, peppers then add the chicken and serve mixed into rice. Often add knob of butter too to keep it from being too dry! Can add anything you have really - chopped bacon would be good, I think.
