    Depending on the size, aim to use to use two thighs and maybe the two drum sticks with a small amount of breast meat each for the roast meal.


    Ideas
    Cold meat and baked potatoes with salad?
    Chicken curry
    Chicken pie (with some veggies depending what you have) either with potato or pastry topping
    Chicken pasta bake (with white sauce and some veggies)
    Chicken with arrabiatta sauce
    Stir fry chicken

    Then when the carcass is almost bare, boil it up and make stock and use the scraps for soup.

  • One of my faves is chicken and leeks in a cheese sauce with 2 packs of crisps crunched up "depends on the size of pie" and grated cheese on top of that. Cook it until the cheese bubbling and crisos have browned. We serve it with carrots, green beans and brown sauce yummy x

    Chk, Bacon, onion, mushroom pie. Get ready made pastry, fry off Bacon, onion and mush, put in shredded chicken, pour in tin campbells condensed chk soup, fill pie, put pastry lid on, bung in oven! Yum!


    That sounds some yummy, will defo be trying this.

    We've had chicken risotto - ish tonight, made with pearl barley instead of rice, stck from the carcass and the scraps from the carcass, wings etc and it was yummy. So much more filling with pearl barley than rice as well.

    being of oriental origin, cooked chicken goes into egg fried rice with lots of cut up cooked veg and or a stir fry. Also - chicken and black olive quiche <ooooh...... has to lie down>

    hi...id do a roast chicken dinner...then a chicken and mushroom pie....then chicken fried rice....then stock for soup hth

    I have decided to do a roast dinner (Saturday), then a chicken, bacon (have some buried at the back of the freezer to use up) & mushroom pie (sunday) then on Monday will do a risotto - really like the idea of using the stock from the carcass as well.
