Could you not of just put the fresh one in the freezer???
If oyu have already roasted it then I would slice/cut into chunks and freeze in bags labelled chicken for curry/ chicken for roast etc . You can reheat something once so if you roast it then reheat it in a curry then freezer and reheat you are reheating it twice and it may be dodgy.0 -

I often roast and freeze chicken to use up in other meals rather than go into chicken overload in one week. Things I use it for are chicken and leek/ chicken and mushroom/chicken and veg pie (all of which can be made with pastry or topped with potato, chicken and spinach lasange, chicken and broccoli pasta bake, chicken fried rice, sandwiches and pannini and don't forget to use the bones to make stock for chicken soup.

I think I just panicked! I've had chickens go off in the fridge before their use-by date before now and was worried that extra day might be taken up with the defrosting!
Pink-winged Thanks for your suggestions, I'm going to keep some slices for a roast and I like the sound of a chicken and mushroom pie. I've never made one before, I'm thinking pan fry mushrooms then add a white sauce and chicken? Do I bake the bottom layer blind first?
My son will be delighted to get chicken skin sandwiches twice in one week (nothing on earth would persuade me to eat chicken skin sandwiches but it appears to be considered somewhat of a delicacy amongst his group of friends!)

I was tempted by a combination of 6 p off per litre of fuel if you spend £40 and a 3 for £10 offer on whole chickens at my local Morrisons today. Normally I would roast the bird and then use the carcase for stock and the meat for adding to pasta with tomato sauce, but with 3 birds that means that we will be eating the same thing for an awfully long time! Any other suggestions will be welcome!0

I often buy and roast a whole bird, then strip the meat off in as large chunks as possible and freeze them. very handy to defrost overnight and make sarnies, chicken salad or even chuck into prepared jar sauces (not very Mse I know but I keep a few in for those nights when I do NOT feel like standing for ages in the kitchen preparing things from scratch!). 3 chickens for a tenner sounds like a bargain to me!0

Thanks for the reminder that I can do this, luckily I defrosted the freezer last week so have a lot of space- I have to admit though that whilst I always have the best intentions when I put this kind of thing in there - all bagged up and ready to go and tucked in with a rosy glow that I am being really MSE - they always seem to migrate to the back and end up in an unidentifiable lump which always gets put back until It finally succumbs to terminal freezer burn! Maybe I'll be good this time.....0

I usually have a roast the first day, then make a pie the second day (make a cheesy sauce and add veg and cover with pastry or potato) and then use any left overs for sandwiches. I'd roast them all. allow to cool. strip meat from the carcass. freeze meat in several bags or containers. make stock/soup with carcass and bits of meat. freeze in several portions. use meat as and when needed for sandwiches,curries,salads,etc.0
