I would use it mixed in with berries as a cheescake topping.

I make this with leftover jam - everyone in the house loves it. Kind of a jammy flapjack.

85g (3 oz) soft brown sugar
    140g (5oz) SR flour
    225g (8oz) porridge oats
    115g (4oz) butter
    200g (7oz) jam

Mix sugar, flour and oats. Rub in butter, then stir in 2tbsp cold water.
Line baking tin (10in x 8in) with paper (I just use a silicon tray), press just over half mix firmly into the base.
    Spread with jam.
Scatter remainder of crumbs over the top, press down lightly.
Bake for 25 mins at 180 degrees until golden.
Leave to cool in tin, then cut into slices.
    Now proud Mumto3 :j

I usually use a thick layer on the bottom of a bakewell tart when I have too much..it's surprising how quickly it gets used up.
