I use it in Coronation Chicken (cold chopped cooked chicken, halved green grapes, chopped spring onions, chopped apple dressed with mayonnaise mixed with curry powder, lemon juice, apricot jam, salt and pepper and corriander). It's really yummy honestly! - I serve it with lettuce on crusty bread.Jane

You can use it as a glaze for pork chops, joints or ribs - mix it with a bit of ketchup and mustard. It goes sticky and tastes lovely!:happylove0

It's nice in Queen of Puddings - I learnt how to make this when I was at school and it's still one of my favourite puds. Delia's recipe uses raspberry jam but apricot is fine:

Hi all,
I was rummaging through the cupboards and realised I have several different jars of jam we have accumulated (all these organised people giving us jam as presents!). unfortunately, its not something we eat alot of, but I can't bear to waste food so was wondering if anyone had any ideas on ways to use it up? I'm quite a keen baker so recipies would be good.
I currently have:
1 jar plum jam
1 jar summer fruits and pimms jam
1 jar apple pie jam
1 jar strawberry jam (open)
1 jar blackcurrent jam (open)
Also how long does jam keep? The Plum jam was given to us about 18 months but has been kept in the fridge and not opened. The others are all in a cupboard. Will that be ok?
I'd already thought of a victoria sponge and its just occurred to me that jam tart is an obvious idea! Duh! My problem is the OH will only eat strawberry or Raspberry jam (and hes decided he doesn't like the strawberry jam we've got open :rolleyes:) So has anyone got any ideas where hes not likely to truly taste the jam?

Oh Cornflake tart is one of my favourite, just like a jam tart, but when it's cooked put on top a cornflake mixture, like the sort you make when doing cornflake cakes.
Plum or Blackcurrant jam would be nice with a chocolate cake. home made rice pud with jam, melting moments with jam - these are in Bero cookbook - my bible
pancakes with jam and icecream are lovely. I make them and dollop my MILS delish rhubarb jam on them - yum! Manchester tart, shortcrust pastry case (I cheat and buy mine) smother inside with jam, put a layer of bananas on top and then put custard on top and add dessicated cocounut too if you like, it's yummy!!!

Put a blob of jam in your apple crumble for a different flavour.
My DS had an excellent idea at the weekend - put two different colours of jam in each jam tart. I haven't tried it yet but he's definitely got his Dad's brains.
Make a microwave sponge - the usual 4+4+4+2 eggs and cook on full for 5 mins, with jam on the bottom and a jug of custard to hand around
And, we used to have something at school where the sponge was on the bottom and then they spread jam and coconut on the top. I think you have to water the jam down a little (boiling water) to get it to spread easily.
Has anyone said Bakewell Tart? Yum0
