I didn't think much of it when i tried it either.

I much prefer Cookie Girls (Xanthe Milton) vanilla cupcake recipe:

    110g unsalted butter
    110g caster sugar
    2 large eggs
    110g self raising flour
    1 tsp baking powder
    1 tsp vanilla extract

if you're interested! Her Lemon Finger Cookies are lush too! There are loads of stuff in her book I can't wait to make!

Thank you :) i will try this and the one in the link above tomorrow me thinks.

Possibley stupid question what do people think turns out better?... hand mixing or machine mixing... also does it actually matter what order you do things... or do you bung it all in at once?

Sorry for the questions but one day i'd love to be as good as you all are and the sponge is the 1st step of course.

I use an electic mixer as I have a Kenwood and I love it. I always do sugar and butter first mixed well until it starts to go fluffly and light, then add the eggs one at at a time and then finally dry ingredients.
how do you get the icing on cupcakes to be such fat lines, what icing bag/nozzels are used?

You need to use a large nozzle like this one

How did you get your photos to appear in your post? I can't for the life of me remember how to do it!!!
  • I just copy them from my Facebook account n paste them. That's why there always so big,
I don't know how to make them smaller I'm afraid

Wow Angela. That's a fantastic wedding cake! :T

It must have taken ages to make & decorate all those cupcakes. I made 48 last year for my daughter's 10th wedding anniversary party, and that took me long enough! :)

They had a village fete theme.
My only stipulation for the cup cakes was that wanted bright colours and a topper.
I was a bit too relaxed about it really.
I had made all the hearts, flowers, embossed shapes etc beforehand.
Started friday about 2pm baking cakes, sister
(grooms mother) ,brother in law and two of his relations came round about 5-6.30 for some champagne to get the party weekend off to a good start.
Started decorating 6.30pm and finished decorating 180 cup cakes about 2am.
    Bath 7am Sat
Set up cakes at 9am (20 miles away)
    Home to change
Wedding 12 midday (20 miles other way)
Had the time of my life from then on.
They were made up with it and everybody thought it was really great.
Must admit I was pretty happy with it, and I am my own worst critic.
