Its just an all in one victoria sandwich cake recipe I used one egg per colour but it was a bit tall if I made this again I would use a 2 egg mix then divide it into 3 and colour it 3 differant colours if you see what I mean.
That is a gluten free sponge as my niece is coealic I put homemade lemon curd inbetween the layers so as not not split the colour up if you see what I mean,I was orininally going to put buttercream inbetween but I didnt want to split the colours up too much.
Another tip re putting the buttercream around the edge and top (not sure if I am teaching you to suck eggs here but for those who may find this a handy hint) I put a very thin layer of buttercream on the cake and then put it in the fridge for 1/2 hour to set then put another layer on top of that, otherwise you will have a problem re the sides of the cake coming off and mixing coloured cake crumbs with your nice white buttercream.
What I like about this cake is it looks pretty boring on the face of it, I just put one candle on the top for my niece,then when you cut it, it looks pretty amazing and a nice surprise for the recipient.
Put all these ingredient in a food processor and mix for 3 mins
116g soft marg
116g caster
116g sr flour
2 large eggs
3/4 tsp baking powder
Split into 3 bowls and colour,
I would weigh this so you get the exact same size cakes for each layer,but I do have OCD lol
Bake in 7" victoria sandwich tins
25mins 160 degrees(fan oven)

Hi found this forum the other day and have read through all the posts and just love the cakes.
I have always made cakes of some sort or another but have never done anything as fancy as some of these. I usually make letter or number cakes or just simple muffins or victoria sandwich cakes.
About a week ago my grandson asked if I would make a Thomas Cake for his birthday and in my infinite wisdom I said yes. :eek: never made a sculptured cake before.
As it was my DHs birthday last week thought I would practice on him and made him this lorry cake, didnt think it was to bad for my first attempt still lots of room for improvement. Would have put up an image but as a new user wont let me
Have put this forum in my favourites and hope to chat to lots of you about cakes and share different ideas and recipes.0 -

Lots of people use lurpack and really keep mixing it until it get white. Otherwise there is a food colouring powder by sugarflair called extra white. I found this helped out quiet a bit with my buttercream.:rudolf: :xmassmile0
