    Thanks for that i've been reading all the comments about the recipe, some are hit and miss but it sounds good so going to give it ago, did you use the glycerine? Never heard about putting that in before.

    I was going to bake it on Thursday for Saturday evening party but it said to leave for 12 hours to settle, but I was going to decorate it on Thursday, do you think it would be ok if I baked it tomorrow evening and left it in an airtight container then decorate it Thursday, would this still be ok for Saturday? I'm going to cover in butter cream then fondant.

    So worried about this cake it's fine baking for family but whole different story for strangers & work people :eek:

    Yes, I use the glycerine. I've done it as per the instructions and it's come out perfect every single time.

    Definitely leave it a couple of days or it will leak moisture into the icing. I wrap them tightly in baking parchment and cling film. If they need carving I freeze them a bit too. Last one I made was made almost a week before decorating and was still beautifully moist when cut 10-12 days later.

    Do you think Thursday will be ok to decorate it or will it need another day or so? I could decorate it Saturday as the partys not until early evening but didnt want to leave it until last min incase it totally goes wrong!

    Thursday should be fine. Don't panic!

    Update on Coconut Cake
    Well I took some of the advice given and made the coconut.
    The recipe i used was:
    225g Butter, softened, plus extra for greasing
    150ml coconut milk
    2tbsp Icing Sugar
    50g desiccated coconut
    225g caster sugar
    4 eggs
    200g Self Raising flour
    2 tsp baking powder
    2 tbsp Vanilla Essence

    FOR THE FILLING/TOPPING
    Coconut Cream cheese filling:
    50g desiccated coconut
    200g soft white cream cheese, softened
    200g icing sugar
    Couple of splashes of left over coconut milk
    1 tsp of Vanilla essence

    Its a triple layer cake,I put it in gas mark 4.
    I put the coconut milk,icing sugar and desiccated on a pan and heated it up first.Then just put to aside to cool. Then using electric beaters, creamed the butter and sugar in a bowl for 3-4 minutes until it was light and fluffy. Then I beat in the eggs, one at a time, until well combined, then beat in the coconut milk and desiccated coconut and put in the vanilla essence. Fold through the flour and baking powder, then divide the mixture between the 3 cake tins and bake for 25 minutes until golden and risen.
    Then just make up the cream cheese filling and chill it.
    I would advice not to put the cake in the fridge as it goes hard.
    I toasted a little of the coconut in the oven to sprinkle of the finished cake. I had on left over almond flakes that i toasted on as well.
    It really did taste great and I would like to thank everyone on here for inspiring to actually make something.
    I have just remade it for tomorrow for my sisters birthday-she will love it.

  • I cheated a bit as I used 2 x boxes of Betty Crocker Devils Food Cake mix, but everything else (except the snitch) was made by me.

    Individual strawberry cheesecakes. They were delicious.

    I made a cake and I dont know how to upload on this lol. Its not anywhere near as nice as ones I saw though on this lol. But its first cake I have ever made from scratch :) x

    Hiya! Great cakes everyone! I'm sorry I've been a but absent from here recently. I'm 15 weeks pregnant with baby number 4 and between 3 other kids and nightshifts, cake has been the last thing ony mind recently! Back to baking though. It's my youngests 2nd birthday tomorrow and I'm doing a mickey mouse themed cake so will post pics!
