Well we finished the mega bakeathon about half an hour ago and I'm now sitting down with a beer!
I snapped some pics for you
I don't really use recipes as such I just make it up as I think of ithere's a rough idea though...
All the cakes start off as a standard 3 egg sponge for 12 cupcakes. I then flavour as follows:
Lemon: lemon flavouring in the cake and then once the cake is cooked and cooled it gets injected with lemon curd. The frosting also has lemon flavouring and yellow colour in half to get a nice two-tone effect.
White Choc and Raspberry: The cake is flavoured with white choc drinking powder, raspberry flavouring, real raspberries and chopped white choc. The frosting is split in half with white choc powder added to half and pink colour and raspberry to the other before piping.
Banoffee: the cake mix has a bit of vanilla and 2 bananas per 12 cupcakes added to it. I then hollow out a bit once cooked and fill with some caramel made from boiled condensed milk. The frosting has more caramel added and is topped with dried banana and drizzle of caramel. Definitely one for those with a sweet tooth!
Mint choc chip: cake mix has cocoa and liquid chocolate flavouring as well as chopped milk choc. Frosting has mint extract added. Topped with 1/3rd of a flake and little chocolate balls?

I tend to do cupcakes only at the moment. Two main reasons really; firstly, they scare me a little bit!!! And secondly, everyone always asks me for cupcakes because I'm the 'cupcake man' and I genuinely think people would be disappointed if I turned up with a big celebration cake and not cupcakes...
The bananas are the dried ones you can buy... Coated in honey I think.0 -

The one I use is made by Options and should be in the supermarkets with the hot chocolate. You can get it either in sachets or in a jar but the jar works out much cheaper. I know sainsburys definitely sell it because that's where I got mine from
Sorry I meant to say the frosting I used on all apart from the Mint Choc is my old faithful half Trex and half butter with a bit less icing sugar than I think others use. I think this makes it a little less solid and sweet than the usual buttercream.
For the mint choc I use this frosting which is just delicious! Velvety smooth and soft, it's like a cross between marshmallow and ice cream. Not too sweet either and just a tiny bit less calories than a regular frosting!0 -
