Well the anniversary cake went down really well! I made a coffee cake with coffee buttercream this morning. Iced it a bit too soon though and is a bit melty! Tastes good apparently though. Made a chocolate cake as well and will do white chocolate buttercream but was in a rush so will ice that later this evening!
My sister has requested that I make a 3 tier jubilee cake with different colour sponge! Don't think that will happen though.
As it's Go Dotty this week for Demelza, we're doing fundraising at work and I need to make cakes for our cake sale and Guess the Weight of the Cake!
My mum suggested I try selling my cakes and making them to order but I'm not capable of that at the moment!
Would quite like to do some courses in the near future on cake decorating etc but don't know where to find them locally so will keep trying to find some.

I have never made a chocolate maderia before but would have thought it would be the same principal to just replace 1oz of flour with 1oz of cocoa powder thats how I would do it. Hope this helps0 -

WOW just looked through the entire thread and all the cakes are amazing.
Can I just ask, if it possible to make cupcakes and decorate them with the rolling out icing and then freeze them ?
It is for my ds holy communion on Saturday, I am working all day thurs and fri so will have no time.

For my chocolate madeira i use 250g sr flour, 125g plain flour, 250g butter, 250g caster sugar, 4 eggs and then 2 tbsp cocoa powder and 1 tbsp milk. This will do an 8" round.
Jazzypinkpuppet, you can freeze the cupcakes but I wouldn't freeze them with the icing on as I don't think it would defrost well. Maybe someone else can clarify?? Hope you all have a lovely day though! My DD made her holy communion last year x0 -
Finally got DS2 down for a nap so I'm off to ice some cupcakes. First time I've decorated cakes after being up all night at work and not got to bed the next day! Hope they turn out ok! Will post some pics later x0
