    I poke loads of holes in mine with a skewer so that the syrup goes all the way through and haven't had any probs with it being dry x

    Can't help with the dry cake problem I've still not got around to trying it. Although there is a tub of Greek yogurt sitting in my fridge waiting :)

    Nat I've never done a light fruit cake as a celebration cake so I'm not much use:( Dark fruit cake is full of fruit and improves with age and feeding. I mature for a three month minimum longer if possible and it is just delicious. I've made light fruit cakes and soaked the fruit in cold tea over night but think you could swap the tea for something like brandy!

    Posting at silly o'clock again! Finished the above mentioned wedding cakes and they are GONE. Minnie Mouse will be finished first thing in the morning and she'll be off too. DH suggested I made a cake for one of our neighbours who is having a birthday party at the weekend (we fly on hols early early Friday morning) I was trying to swerve that one!!! Bless him. I'll have to see what tomorrow brings and how "helpful" our DGD1 is:)

    Does anyne know what would happen if I used golden caster sugar instead of light brown sugar? I haven't got enough brown and DS is in bed! Want to start baking whilst he's asleep!

    Go for it Nat if he's still asleep:) think the brown just has a bit of a treacly taste! But I'm no expert!

    Just heard that the bride and groom are delighted which is lucky cos there's not a lot I can do now:)

    Late night baking last night getting these ready for my son to take into school as he leaves on Weds. He only asked me at 10pm when I got in from work so we were both up till 1am.

    Hello everyone,beautiful cakes,I adore coming on here and particularly like looking at the photos of the delicious bakes ;)
    I know this question has been asked before but I am after your opinions on which mixer to buy,as I know quite a few of you have firsthand experience at the ones I am looking at.Top of my agenda is that it helps me make scrummy cakes and that it is not to faffy and is easy to clean in terms of taking apart.
    I'm torn between the kenwood prospero,the kitchenaid (beautiful colours) and the kenwood firecracker.My absolute max budget is 420.
    I bake alot from home and am considering setting up my own small cake business,but I bake by hand and have never used a mixer before.Do they mix the ingredients properley?Thank you :)
