    Hi Ladies
    Just a quick question do you all colour your own sugarpaste or but it in the colour you need? I want to make a two tier cake and cover it in mint green but dont know whether to but it all ready that colour or to colour it myself. The bottom will probably be a 9 inch the top a 7 inch so just worrying that if I colour it msyelf that is a lot of sugarpaste to colour and also worried about the icing being all the same colour as I would have to do it in batches.
    I am having trouble sourcing the mint green sugarpaste and can only find one supplier on the internet. (feel like I have rambled a bit here sorry to bend your ears:p)

    if i need to make a big batch, i make several small batches and then put them altogether for a final working, so it just evens out the tone

    however, you can usually judge by eye, or rough counting dobs of colouring - you might, but no-one else really notices a slight shade differentiation between tiers - espec if you have something that splits the divide (be that pillars or a ribbon, etc)

    Has anyone made the Hummingbird Red Velvet Cupcakes...thinking about making some tomorrow. Recipe states 40ml of Dr.Oetker red food colouring...the btls are 38ml do you think I will get away with just using that. Also the bottle I bought is Dr Oetker Natural Red colouring do you think there is any difference between that and red !

    Natural red will turn your cakes brown. You need to use an artificial red for red velvet. I use sugarflair Red extra, as you don't need so much as it's super concentrated.

    That's a disaster then Annie, I've got all the other ingredients in to make them...if I buy a red colouring in a sml bottle will that be ok as I'll not be able to get sugarflair red extra.

    Oh yes, any red colouring will be fine, as long as it's not the natural one. I love red velvet cakes

    They do look nice in the book........do you crumble one up to decorate the tops as they suggest ?
