Shelley - you would have to crumb coat with buttercream anyway if you were using roll out icing so buttercream on its own will be fine!

Shegirl - your cake is amazing! You should be so proud of yourself. Home made cakes are not meant to be perfect or else they would look like the manufactured pooh that you get from a supemarket. There is a tonne of love in that cake you make which makes it taste and look much better that anything else in the world! Well done xxx

Wow shegirl, you're cake is ace! Doing a single tier cake is daunting enough and you've done three. Sounds yummy too, now I want cake.

Oh Yummy your cakes look so so good. You are very talented you should be very proud of yourself :)
I've seen the chocolate collars used in a book but never had a go. You'll have to let us how it's done and how you got it to look so very professional :)

Thankyou for all your compliments, really made me smile! everyone tells me I'm really good at it, but when I look at a cake I've made I only see whats wrong with it!

For the chocolate collar I just followed a video on youtube (I love youtube!)

You just measure around the cake with a piece of string and then cut some greaseproof paper to the same length of the string and to whatever height you want it.
Then do whatever pattern you want on the paper first and let it set, then put the layer of choc over the whole thing, let it set to the point where it isn't dripping of, but it's still flexible, then pick the whole thing up and wrap it around the cake and leave it to set completely and then you can peel the greaseproof paper off...I'm not sure if that makes any sense so heres the link to the youtube video!

and theres better instructions here - http://pollyspatisserie.blogspot.co.uk/2010/07/making-chocolate-cake-collars.html

I had to work with the cake in the fridge most of the time as the day I made it was really hot, typical! had to find the coolest bit of the house to do the choc collar!

I'm going to the cake international show in London on friday, really excited! It has some chocolate workshops which I'm really looking forward to because I love working with chocolate! And I've also booked some sugarcraft workshops because I want to learn how to do some modelling!

I've done a class on flowers, this is what I made

I want to learn how to make people and animals to go on my cake though! Here's the link if anyone wants to have a look http://www.ichf.co.uk/cake/?show=london

Sorry for such a long post!
